Jump to RecipeYou know I’m a (slight) regular-dark chocolate fan here, but I think these white chocolate caramel bars are just hold a special spot. I think it’s this combination of peanut butter and white chocolate that is just supreme!
But I think the best part about this peanut butter caramel protein bar recipe though is that it has a caramel that’s actually made with peanut butter (pb powder actually) so it has an even richer flavor than you expect!
Ingredients for Healthy Peanut Butter Caramel Slice:
These protein peanut butter caramel slice bars are made with simple healthy ingredients, have no sugar or milk, making them the perfect gluten free, dairy free and sugar free homemade protein bar!
- Instant or Rolled Oats; Use gluten free if needed
- Puffed Rice Cereal
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein. I recommend the Multi-purpose mix protein powder from Quest Nutrition.
- Vanilla Protein Powder for high protein magic cookie bar, and also replace the sweetener.

The Protein Peanut Butter Caramel Layer
These peanut butter caramel protein bars use a low fat and sugar free caramel layer made with peanut butter powder and protein powder.
- Vanilla Protein Powder for high protein peanut butter caramel.

To store Protein Peanut Butter Caramel Slice
To store homemade white chocolate peanut butter protein bars, place in an airtight container and keep on the counter for up to 3 days.
Keep these homemade peanut butter protein bars refrigerated or in the freezer so they stay fresh and last longer. They keep in the fridge for up to a 1 week.
To freeze, place peanut butter caramel protein bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!
Alternatives for Healthy Peanut Butter Caramel Bars!
I made these sugar free and gluten free and low fat peanut butter caramel layered protein bars with this particular ingredient list, but here’s some healthy options to choose from.
- Unflavored protein powder: Unflavored Collagen, or even Almond flour or Oat flour
- Vanilla Protein Powder: 1:1 Zero Calorie Sugar Substitute; I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too)
- Puffed Rice Cereal: Use rice krispies, Cheerios, Chex or any other crunchy cereal (you might have to play around with the quantity a little)
- Sugar free Maple Syrup: Regular maple syrup or Honey, but they won’t be Vegan or a no sugar recipe anymore.
- Peanut Butter Powder: Creamy peanut butter, but reduce the milk; start with adding just a little at a time
- Almond Milk: Regular milk or other non dairy milk
- White Chocolate: Use milk or dark chocolate chips – Lakanto for a sugar free option again (code HAYLSKITCHEN for the discount) – instead.
Vegan Peanut Butter Caramel Slice
Since there’s no real caramel and milk in this dairy free recipe, this peanut butter caramel slice can easily be made Vegan.
Use a plant based protein powder to get a Vegan protein caramel bar; ProteinWorld has a Vegan protein blend as well.
You also want to make sure you use dairy free chocolate chips to make these white chocolate caramel bars.

Healthy Peanut Butter Caramel Slice (High Protein, Low Fat)
Ingredients
Base:
- ⅓ cup Rolled/Instant Oats, 30g
- ½ cup Puffed Rice Cereal, 9g, see post for subs
- 1/3 cup Unflavored Protein Powder, 30g, 1 scoop, see post for subs
- 3 Tbsp Almond Flour, 15g
- 2 Tbsp Maple Syrup, Sugar-free recommended below, 45ml
Peanut Butter Protein Caramel:
- ¼ cup Vanilla Protein Powder, 22g
- ¼ cup Peanut Butter Powder, 24g
- 2 Tbsp Creamy Peanut Butter, 32g
- 2 Tbsp Almond Milk, 30ml
Chocolate Topping:
- 2 Tbsp White Chocolate Chips, Sugar-free recommended below, 28g
- ¼ tsp Coconut Oil
Instructions
- Line a 7×5” pan or 8½ x 4½” loaf pan with parchment paper; leave an overhang to lift out later.
Base:
- In a food processor combine oats, cereal, unflavored protein powder, and almond flour.
- Transfer to a bowl, add in maple syrup and mix. Mixture will be like a dough.
- Transfer to prepared pan and press down.
Peanut Butter Protein Caramel:
- In the same bowl, stir protein powder, peanut butter powder, peanut butter and almond milk to form thick mixture.
- Spread on top of base and use back of spoon/spatula or fingers to smoothen.
Chocolate topping:
- Place chocolate chips in a bowl, add in a bit of coconut oil, and place over a bowl of boiling water. Stir until melted.
- Spread chocolate on bar and use back of spoon to smoothen.
- Transfer to freezer to cool about 5-10 minutes.
- Lift layers out of pan, place on cutting board and using a sharp knife, slice into 6 bars.
