This homemade healthy high protein sugar free pistachio cream recipe is really easy to make with just 3 simple ingredients! I added some matcha for that extra pop of color and earthy flavor, but its totally your call!
Here’s what all you need:
- Pistachios – The star of the show! Raw pistachios are highly recommended for that green color, but you can use roasted ones as well.
Just be sure to follow the blanching and peeling step to get a smooth nut butter. - Vanilla Protein Powder – Adds creaminess and sweetness while increasing the protein content, making this a true High Protein Pistachio Cream.

How to Make Healthy Pistachio Cream at Home without White Chocolate or Sugar
Step 1: Blanch & Peel the Pistachios
- Bring a small pot of water to a boil – about 2 cups worth.
- Add the pistachios and blanch for about 30 seconds.
- Drain and rinse under cold water.

- Blend long enough; At first, the pistachios will be like large crumbs, but keep blending until it’s completely smooth. Each food processor is different, so you might need to blend for longer depending on what your brand is. Stop and scrape down the sides as needed to make sure everything gets incorporated well.
