With all the St. Patrick’s Day recipes coming up, I wanted to hop in with some green stuff too, and this protein Pistachio delight really was too easy to say no to.
Ingredients for Healthy Pistachio Pudding Dessert
This healthy pistachio pudding dessert is made with sugar free instant pudding, protein powder instead of sugar and sugar free maple syrup too. Just a tiny bit of sugar from the graham crackers, but this pistachio pudding lasagna is overall a really healthy one.
The Graham Cracker Base
- Graham Crackers
- Cheerios Cereal
- Almond Butter

For the Protein Cream Cheese Layer
A low fat one for a healthy pistachio cheesecake dessert lasagna
- Reduced Fat Cream Cheese
- Non-fat Greek Yogurt
- Vanilla Protein Powder; This is the replacement for sugar; I used Quest Nutrition Vanilla here.
- A bit of Unsweetened Almond Milk
The Pistachio Protein Pudding
- Non-fat Greek Yogurt
- Vanilla Protein Powder Quest Nutrition again here
- Pistachio Instant Pudding Mix: I used this sugar free and fat free one from Jello
- Unsweetened Almond Milk
The Topping:
- Reduced Fat Cool Whip
- Chopped Pistachios

This high protein pistachio pudding dessert with graham cracker crust recipe is actually super easy to make; All you have to do is form all the layers one at a time, spread them out in turn, and completely smoothen out before adding on the next one!
Tips to make Pistachio Pudding Layered Dessert
- Blitz the Graham Crackers and Cheerios completely before adding in the maple syrup and almond butter so the mixture is uniform.
- Use softened cream cheese so everything mixes well in the cheesecake layer of this pistachio lasagna delight.
- Beat the cream cheese well before adding yogurt.
You really want to do this step so the cream turns out light and fluffy.
- Smooth out each layer completely before adding the next so you actually have a proper layered pistachio pudding dessert.
- Use thawed cool whip topping (not frozen).
- Let lasagna chill in fridge 1-2 hours before eating so it can set.
How to store Protein Pistachio Dessert Lasagna?
This protein pistachio dessert lasagna recipe keeps well in the fridge for upto 4 days (in an airtight container).
To freeze healthy pistachio pudding dessert lasagna, slice and wrap each piece in plastic wrap, and then place in freezer-safe zipper bags. Thaw in fridge before eating.
I haven’t tried this myself though.

Ingredients
Graham Cracker Base:
- 4 sheets Graham Crackers
- 1 cup Cheerios Cereal, 28g
- 1½ Tbsp Sugar-Free Maple Syrup, 22ml, Recommendation Below
- 1 Tbsp Almond Butter, 16g
Cream Cheese Layer:
- 6 oz Reduced Fat Cream Cheese, 168g
- ¾ cup Non-fat Greek Yogurt, 168g
- ⅓ cup Vanilla Protein Powder, Whey-casein, 30g
Pistachio Pudding:
- 1 cups Non-fat Greek Yogurt, 225g
- ⅓ cup Unsweetened Almond Milk, 80ml
- ½ cup Vanilla Protein Powder, Whey-casein, 45g
- 2 Tbsp Pistachio Instant Pudding Mix, 15g, Sugar-free recommended
Topping:
- 4 oz Reduced Fat Cool Whip, 1½ cups, 112g, Thawed
- 1 Tbsp Chopped Pistachios, 14g
Instructions
- In a food processor, combine crackers, cheerios, maple syrup and almond butter until crumbly.
- Spread on bottom of pan and press down firmly with back of spoon or small spatula.
Cream Cheese Layer:
- In a large bowl, beat cream cheese using an electric hand mixer or paddle attachment of stand mixer until smooth; About 30 seconds.
- Add Greek yogurt and beat again until combined.
- Beat in vanilla protein powder, scraping down the sides if needed.Add milk if needed – little at a time – until spreadable, but thick.
- Spread over base.
Pistachio Pudding:
- In a bowl, mix Greek yogurt, protein powder, pistachio instant pudding, and milk until smooth.Add milk a little at a time until pudding consistency is reached.
- Spread over cream cheese layer.
Topping:
- Spread cool whip on top of pudding and top with chopped pistachio.
- Cover with plastic wrap and chill 1-2 hours in the fridge.
- Cut into 9 pieces and enjoy.
