But then I looked into it – saw a video online from Zach Rocheleau and turns out homemade healthy pop tarts are actually very easy! Adapted that recipe itself here, but had to make it even more high protein and a single serving recipe because that’s just me. Lol
Anyway, these healthy protein pop tarts are definitely going to be a regular now – as long as I don’t get hooked onto something else!
Is there such thing as Sugar Free Pop Tarts?
Yes, with this recipe you really get the perfect macro friendly and sugar free pop tarts! Protein powder to sweeten the pop tart crust, a homemade sugar-free strawberry jam for the filling and a sugar free protein powder and Greek yogurt frosting on top.
Ingredients for Homemade Healthy Protein Pop Tarts
This healthy protein pop tart recipe has just a few simple ingredients, and is perfect for a solo gluten free, sugar free and Vegan dessert.
Here’s what you need:
For the Protein Powder Pop Tart Base
- Gluten Free (All Purpose) Baking Flour – or a regular all purpose flour
- Vanilla Protein Powder for high protein magic cookie bar, and also replace the sweetener.

- Non-fat Greek Yogurt contributes to the high protein part of these homemade pop tarts.
Healthy Strawberry Pop Tart Filling
- Fresh or Frozen Strawberries
- Chia Seeds
- A bit of Sugar Free Maple Syrup; I use the monk fruit maple syrup from Lakanto (code HAYLSKITCHEN gets you a discount here too)
A Sugar Free Pop Tart Frosting with Protein Powder!
- Unsweetened Plain Non-fat Greek Yogurt

How to make Single Serve Protein Powder Pop Tart in the Air Fryer
Making homemade pop tarts in the air fryer is really easy – much easier than I expected it to be!
Prep the Homemade Strawberry Pop Tart Filling
- Mash with back of a fork (or use food processor) to crush.
- Add chia seeds and maple syrup and stir. Place in fridge to thicken about 5-10 minutes.
Make the Healthy Gluten Free Pop Tart Base
- Process the flour, vanilla protein powder and peanut butter powder in a food processor.
- Add in most of the yogurt and process again to form a rough dough.
- Transfer protein pop tart dough to a work surface (lightly floured) and knead about 20 seconds.
- Roll into a long rectangle; about 10” x 4” and ⅛” thick (patching pieces to make shape is okay).
Use sharp knife to cut into two halves.
Assemble and cook Single Serve Homemade Protein Pop Tart
- Place one rectangle on surface; Brush ½ inch around edges with egg wash (whisked egg/egg whites) or may be water. Use fingers if you want.
- Add filling in middle and spread (don’t go too close to edge).
- Add the second rectangle on top and seal edges with a fork.
Poke 4 holes in the top of the dough (with fork) for the authentic but homemade pop tart look
Optionally: brush with egg wash.
- Line air fryer basket with parchment paper, place pop tart in and cook at 350°F for 4 mins, flip and cook other side another 4 mins. Dough should look cooked and slightly browned around the edges.
Or bake for 11 minutes, flipping halfway.
- Make the frosting: Stir Greek yogurt and protein powder in a bowl.
Let homemade pop tart cool, spread protein frosting on top and add on sprinkles if you like.
Alternates for Healthy Sugar Free Pop Tarts Recipe
I recommend making this healthy protein powder pop tart using the ingredients and products listed – especially the since it gives the best results.
If you need other options for the flours and such, here’s some alternatives:
- 1:1 Gluten Free Baking Flour: Use all purpose flour or whole wheat pastry flour.
You can try to use oat flour; I’m a little hesitant about this one, so let me know if you try it. - Peanut Butter Powder: 2 tsp more Flour and 1 tsp more Protein Powder; I heaven’t tried this yet, so I’d like to know if you do!

- Coconut Yogurt in place of Greek Yogurt

Big Healthy Protein Pop Tarts (Sugar Free & Vegan)
Ingredients
- 3 Tbsp 1:1 Gluten Free Baking Flour, 25g, see post for subs
- 1 Tbsp Vanilla Protein Powder, about 6g
- 1 Tbsp Peanut Butter Powder, 6g
- 2 Tbsp Non-fat Plain Greek Yogurt, 28g, Cold
Filling:
- ¼ cup Strawberries, Chopped Fresh or Frozen, 36g
- ½ tsp Chia Seeds, about 2g
- ½ tsp Maple Syrup, Sugar free recommended below, 2-3ml
Frosting:
- 1½ Tbsp Non-fat Plain Greek Yogurt, 21g
- ½ Tbsp Vanilla Protein Powder, 3g
- Sprinkles, Optional
Instructions
- Filling: Mash strawberry in bowl with back of fork (or use food processor).Add chia seeds and maple syrup, stir and place in fridge 5-10 minutes to set.
- Process gluten free flour, protein powder and peanut butter powder in food processor.Add Greek Yogurt and process to form rough dough – about 15 seconds.
- Transfer to lightly floured work surface and knead until smooth; about 20 seconds.
- Roll dough into long rectangle (about 10”x4”, ⅛” thick); Use scrap pieces around edges to make proper shape.Cut into 2 rectangles.
- Take one rectangle, dot ½” from the edge with water or egg wash, and spread filling in the middle (don’t go too close to edge).Cover with other rectangle, and seal edges with fork. Poke 4 holes in the middle.Optionally brush with egg wash on top.
- Line air fryer basket with parchment paper, place pop tart in. Cook at 350°F for 4 minutes, flip and cook another 4 minutes. Crust should be lightly golden brown.Let cool for a few minutes.(or bake 375°F for 10 minutes, flipping halfway)
- Frosting: Stir Greek yogurt and protein powder in a bowl, spread on top of cooled pop tart. Optionally add sprinkles.

Absolutely delicious!!! I was skeptical at first because, you know, healthy can’t taste good. 😂 Loved it! Used honey since it was all I had and it turned out well. My poptart on the other hand… Let’s just say it looked like a jagged-y turnover. 😂😂 Oh! And instead of the PB powder, I just used more vanilla protein powder. Super delish! Will try oat flour next. My mom never let me eat Poptarts when I was a kid, but she bought the “organic” “healthier” versions with just as much sugar as the regular ones! Since growing health conscious, I’ve been missing sugary breakfast pastries, but I tried these on a whim one day, and WOWZA! They have the perfect flakiness and chew. My protein powder (Iconic brand) has the same taste and texture as confectioner’s sugar, so the glaze turned out super authentic. I’ll always make this for snacks now that I’m upping my calorie/protein intake.
