I thought it would be hard to make, but it really wasn’t. It was just mixing the dough in a bowl, rolling it into balls, rolling the balls in the coating and then baking.
Ingredients For Healthy S’mores Monkey Bread
This healthy s’mores monkey bread recipe uses no sugar or yeast or butter (outside the coating) and is actually made with protein powder and Greek yogurt instead. A truly clean and healthy high protein s’mores monkey bread.
- Whole Wheat Pastry Flour
- Vanilla Protein Powder for a high protein s’mores monkey bread recipe, and also replace the sugar.
I used Quest Vanilla milkshake flavor since it’s a whey-casein and works best for baking. - Unflavored Protein Powder to replace some of the flour in the recipe for a slightly low calorie protein monkey bread. I used Quest Nutrition Multi-purpose whey-casein blend.
- Non-fat Greek Yogurt another protein-packed ingredient
- A bit of Unsweetened Almond Milk
- Baking Powder
The Graham Cracker coating:
- Crushed Graham Crackers
- A bit of Melted Butter
And for Topping:

How to make perfect S’mores Pull Apart Bread with Protein Powder
This protein powder s’mores pull apart bread is an easy recipe – no yeast needed – but here’s some pointers to get it perfect. Just mix the dough, roll the balls, roll in coating and bake.
- Use cold yogurt and milk so that the dough doesn’t get too runny.
- Don’t skip the milk, but add it little at a time; It adds a fair amount of moisture.
- Don’t over-mix the dough or it will get too warm and soft.

Healthy S’mores Monkey Bread – High Protein, Low Fat
Ingredients
- 1 cup Whole Wheat Pastry Flour, 120g
- ⅓ cup Vanilla Protein Powder, Whey-Casein, 30g
- ⅓ cup Unflavored Protein Powder, Whey-casein, 30g, see post for sub
- 1⅓ tsp Baking Powder
- 1 cup Non-fat Greek Yogurt, 225g
- 2 tsp Unsweetened Almond Milk, 10ml
Graham Cracker Coating:
- 1 Tbsp melted Butter, 14g
- 2 Sheets Graham Crackers, Crushed, 30g
Toppings:
- ¾ oz Chopped Chocolate, Sugar-free recommended below, 21g
- ¼ cup Mini Marshmallows, 11g
Instructions
- Preheat oven to 350°F and grease an 8” cast iron skillet or cake pan.
- In a bowl, combine flour, vanilla protein powder, unflavored protein powder and baking powder.
- Add yogurt and milk and mix until combined to form a shaggy dough ball; Stop as soon as ball forms.Do not over-mix or the protein powder will make the bread balls tough.
- Slightly wet your palms, divide dough into 20 pieces (1-2 Tbsp size).Roll into balls (wet palms again as needed)Dough will be sticky.
Graham Cracker coating:
- Melt butter in microwave-safe bowl if not already melted.Place crushed graham crackers in a small shallow bowl.
- Roll a dough ball in melted butter, then in crushed Graham crackers, and place in cast iron skillet.Repeat with all balls.
- Top with chopped chocolate.
- Bake for 12 minutes until outside and center(dough ball intersection) is dry.Toothpick inserted should come out clean.
- Sprinkle on mini marshmallows and broil (500°F) for 2 minutes until marshmallows are toasted.
