Jump to RecipeOkay these brownies were really mind blowing! Every bite is like eating into a piece of strawberry milk. Perfectly sweet, creamy, with strawberry flavor, but actually healthy!
I got the idea for this recipe when I saw my friend Chahinez make some strawberry brownies with cake mix. I really wanted to make a high protein version of that by using protein powder, and also wanted to make it a from-scratch recipe using real strawberries, so here we are.
Trust me you’re gonna want to try this one!
Ingredients for Healthy Strawberry Brownies:
These healthy strawberry brownies are made with fresh strawberries and protein powder – no cake mix or sugar needed! Just a few simple and healthy ingredients; Here’s what you need:
- Fresh Strawberries
- Vanilla Protein Powder needed for high protein blondie and also replaces most of the ‘sugar’.
I recommend part whey-casein Vanilla protein powder from Quest Nutrition.
And part whey Vanilla from Dymatize for this recipe. - Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb higher protein blondie; Quest Nutriton Multi-purpose here.
- Almond Butter Powder, also known as Powdered Almond Butter. I use the one from PB2.
- Whole Wheat Pastry Flour – or a regular all purpose flour
- Stevia Sweetener
- Almond Milk or regular milk
- Baking Soda
- Vanilla Extract
- Melted Butter
- Red Food Color
- Sugar Free White Chocolate Chips – I use the ones from Lily’s here.
How to make Protein Strawberry Brownies with Fresh Strawberries?
These protein strawberry brownies are made with fresh strawberries – no cake mix needed – and are super easy to make.
Here’s what it takes:
- Preheat your oven to 350°F and line a baking pan (about 8”) with parchment paper.
- Whisk all the dry ingredients in bowl – whey and whey-casein protein powders, flour, almond butter powder, baking soda and stevia sweetener.
- Puree the strawberries – Blend strawberries and milk in a blender or food processor until pureed.
- Add the pureed strawberries, melted butter, vanilla and food color dry mix to the wet and gently fold to combine. Just be gentle and don’t over-mix the batter. The protein powder will make it too dense.
You should have a thick batter. (Taste batter and add stevia powder if you want it sweeter)
- Add in white chocolate chips and fold to combine.
- Transfer the batter into pan(greased and parchment-lined), spread and bake for about 25-27 minutes.
How to know when protein strawberry brownies are ready?
Protein strawberry brownies are ready when the top is completely set and dry, and a tester (toothpick or thin sharp knife) comes out mostly dry.
For extra fudgy protein powder strawberry brownies, let some moisture be there on the tester – this should be at about 23-25minutes.
Wait until cool!
Don’t cut too soon or they will be too soft.
Tips to make Starwberry Brownies with No Cake Mix
Here’s how you make the most perfect strawberry brownies with no cake mix needed.
- Use ripe strawberries so they are sweet enough and you don’t need to add much extra sweetener.
- Use room temperature milk and strawberries ;
This is so the wet ingredients and dry ingredients can mix well.
- Whisk dry ingredients together first so you have a smooth batter.
- Use melted butter also so that it mixes well into the batter
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy protein powder strawberry brownies.
- Don’t over-bake or blondies might get tough; Remove when the tester/knife comes out mostly dry.
Underbaking a little is okay.
Alternate ingredients for Strawberry Brownies with Real Strawberries
For the perfect low fat but moist starwberry brownies with real strawberries, I would highly suggest using the ingredients and brands I recommended; I do have some alternatives you can try. I haven’t testing them all, so I can’t say how your recipe might turn out.
- Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, in the same amount by weight; not cups.
- Unflavored Protein Powder: 20g more Flour, but also reduce milk to 3 Tbsp (45ml)
- Almond Butter Powder: Use peanut butter powder
- Almond Milk: Any other milk
- Stevia Sweetener: Use 2 tsp 1:1 Zero Calorie Monkfruit Sugar Replacement (like Lakanto) or regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Sugar Free White Chocolate Chips: Regular white chocolate chips or chopped chocolate
Want to make Straweberry Protein Powder Brownies Vegan?
You can very very easily make this strawberry protein powder brownie recipe Vegan by using a plant-based protein powder (I recommend KOS), melted coconut oil instead of butter, and dairy free white chocolate.

Cannot wait to try, soon it is season of strawberries in my country so for sure some cake with them!
Oh my gosh yess! You’re going to love this 🙂
Hi! Just a note but this is not gluten free if there is wheat flour! I have celiac disease and wheat is a high carrier of gluten! Do you think this would taste the same with a almond flour or is that too much almond with the butter in there too?
Hey! You can use 1:1 GF baking flour instead and it’ll just our just the same! 🙂
Im not sure how the almond flour will work.
You might need an extra egg in there for binding.
LMK what you think if you try!
How well would thos recipe work with one whey protein?? Looks so delish!!
Whey protein is less absorbent than whey-casein, so you would need less milk.
I havent tried, but let me know if you do?
