Jump to RecipeThat upside down puff pastry apple tart recipe went viral like crazy on Tiktok, and then of course had to carry over to Instagram as well. I saw them all over the place, and this one person was making crazy combinations with savory options too.
Of course I had to give my own healthy version a try, so went with this high-protein peanut butter banana vibe to stick to my niche.
Ingredients for Healthy Upside Down Puff Pastry Tarts:
These upside down puff pastry tarts are made with a low fat and high protein peanut butter spread, banana and honey inside. A healthy recipe that you don’t have to have so much guilt over. Here’s everything you need:
- Frozen Puff Pastry Sheets; I used the one from Jus-Rol
- Vanilla Protein Powder – this makes for a low-sugar and high-protein pastry tart; I recommend the vanilla protein powder from Dymatize.
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto (code HAYLSKITCHEN gives you a discount).
Or you could use the one from PbFit too. - A bit of Honey
- Sliced Banana
- Water
- Egg Whites for brushing
How to make Tiktok Upside Down Puff Pastry Tarts with Protein Powder
This trending Tiktok upside down puff pastry tart recipe is really super easy, and works great with protein powder too! Here’s what it takes:
- Drop honey puddles on a parchment-lined baking pan – leave about 4-5” in between each one.
- Place banana slices on top of honey.
- Stir protein powder, peanut butter powder and water in a bowl until smooth.
Add dollops on top of honey banana.
- Cut puff pastry into rectangles of 5×3” size, then roll out a little using rolling pin.
This smoothens out any creases and also gives you little more surface area 🙂
- Place puff pastry piece on top of fillings (cover like sheet).
- Press down edges with fork so they are sealed will and form a proper peanut butter banana tart when flipped.
- Brush with egg whites so the tarts get brown and extra crip!
- Bake for 15 minutes at 400°F until brown and flaky.
To store Peanut Butter Caramelized Banana Puff Pastry:
These caramelized banana puff pastry tarts are best had fresh – within maybe 30 minutes so they are still flaky.
To store healthy peanut butter banana puff pastries, place in an airtight container on the countertop for about 1-2 days and in the fridge for 4-5 days.
I would recommend re-heating the healthy upside down puff pastries in the oven at 350°F for 5 min-ish or 330°F in the air fryer to get the flakiness back.

I made these high protein and low fat upside down tart with the particular list of ingredients for the perfect texture and molten chocolate effect, but here’s some alternatives you can try:
- Store-bought Puff Pastry: Homemade puff pastry
- Honey: Maple syrup or Caramel!
- Peanut Butter Powder: Regular peanut butter or almond butter, but also use less water in this case
- Banana: Apple or even pear

Healthy Upside Down Puff Pastry Tarts – High Protein!
Ingredients
- 180 g Frozen Puff Pastry Sheets
- ⅓ cup Vanilla Protein Powder, 30g
- 6 Tbsp Peanut Butter Powder, 36g
- ¼ cup Water, 60ml
- 2 Tbsp Honey
- 1 medium Banana, 90g
- 1 Egg White, 31ml
Instructions
- Preheat oven to 400°F and line a baking tray with parchment paper.
- In a bowl – stir vanilla protein powder, peanut butter powder, water.
- Cut puff pastry sheet into 6 pieces, 5”x3” rectangles (30g each for me). Slightly roll out (using rolling pin) to make larger.
- Spread 6 portions of honey – 1 tsp each – on parchment lined baking try, leaving about 6” between each.
- Place banana slices on top of each honey puddle.Divide peanut protein mix on top.
- Cover each portion with puff pastry piece.Press down sides with fork.Brush top with egg white.
- Bake 15 minutes until pastry is slightly browned and flaky.
