So here’s a great alternative. And guess what – there’s a trick to make it taste SO MUCH richer than the regular one’s you’d buy. Roommate approved!
All you need is plain almonds and some patience.
And I guess a oven and food processor/blender, but those are just the basics.
Watch the almonds go from whole nuts, to large ground bits, to a flour-like consistency (almond meal), to chunky lumps, to a smooth dreamy paste.
What is Almond Butter?
Almond butter is basically almonds that are ground into a paste consistency, and can be used as a spread, just like butter!
The reason this works is because the nuts are so high in fat content. So when you grind them, the fats get released and combine with whatever other ingredients you add in, to make a smooth creamy spread.

How to make Almond Butter at home?
The most basic version is the easiest recipe possible: Blend in a blender, or process in a food processor.
All you need to do is throw the nuts in, and let the appliance do its job.
You might need to pause every now and then though to scrape down the sides of the food processor since the intermediate stages of the nut butter will be quite dry and stick to the sides.
The bowl might also get hot depending on how powderful it is (or isn’t), so if it does, just pause the process to let it cool down.
How to make Creamy Roasted Almond Butter?
Roasting the almonds before processing really changes everything.
While it is possible to use raw nuts, I would really recommend the roasting step. It just takes an extra 15-20 minutes – bake the nuts at 350°F for 10 minutes, wait an extra bit of time until it cools and then get right to it!
The flavor boost is definitely worth it!
What makes this basic almond butter recipe healthy?
It’s without out! There’s a lot of recipes out there that call for some form of added fats – typically palm oil, but that really isn’t needed.
Since the almonds are roasted before going in the food processor, there’s no added oil needed to turn the nut into almond butter. Natural oils do the job.
A recipe for Cinnamon or Vanilla Almond Butter?
To add more flavor to your homemade nut butter, feel free to add in cinnamon, vanilla, maple syrup, honey or even cocoa to customize it o your liking. Taste it on the go.

Homemade Creamy Roasted Almond Butter (No Oil)
Ingredients
- 3 cups Almonds, 1lb, 450g
Optional:
- ¼ tsp Salt
- ¼ tsp Cinnamon
- ½ tsp Vanilla Extract
Instructions
- Place almonds on a large baking sheet and spread into a single layer.
- Bake for about 10 minutes, shaking half way.
- Let almonds cool slightly until warm, 5-7 minutes.
- Transfer to a food processor or high-speed blender and process until smooth, scraping down sides if necessary. Takes about 3-4 minutes
- If mixture gets too hot, stop processing and allow to cool for a bit before continuing.
