Jump to RecipeHot Parfait? Well I really wanted to do an oatmeal recipe inspired by a yogurt-based dessert, and the first thing that came to mind was a yogurt parfait. But since this is a bowl of hot oatmeal, fruits for a topping was as close to parfait as I could get.
As for the oats here, If you thought adding protein powder to oatmeal makes it creamy, you’re really going to be impressed with this one!
The greek yogurt – with the protein powder – not only makes it a double protein oats, but also doubly creamy!
Also gives it the slight hint of tanginess that goes really well with the regular protein powder sweetness.
Greek Yogurt Protein Oats Ingredients:
This extra high protein oatmeal recipe uses non fat greek yogurt and vanilla protein powder, and steel cut oats for a creamy texture!
Here’s the full list of what you need to make this healthy chocolate oatmeal:
- Steel cut oats for a rich nutty flavor, but you can replace it regular rolled oats as well. Use gluten free oatmeal if you need to.
- Water to cook the oats.
- Cauliflower Rice to bulk up the oatmeal, or just double the oats, water and almond milk.
- Non fat Greek Yogurt or Coconut/Soy-based Yogurt for a Vegan and dairy free protein oatmeal. Use the plain one for a no sugar version.
- A good Vanilla Protein Powder for a good yogurt vanilla protein oats. I always do Quest protein powder in my oatmeal recipes.
- Water or Almond Milk to thin out the proats after adding the dry ingredients. Water is just fine for a no milk version.
If your protein powder is not sweet enough, add some sweetener – I recommend stevia for a sugar free greek yogurt oatmeal.
Why Cauliflower Rice in this Hot Oatmeal with Yogurt?
I always make riced cauliflower oatmeal since it adds in bulk without all the carbs and calories that the same amount of oats would add.
Another benefit of adding cauliflower to oatmeal is that you eat vegetables for breakfast without even tasting them!
How to cook Creamy Steel Cut Oats on the Stove?
There’s plenty of ways to do this (instant pot, crock pot, baked), but this recipe is for stovetop steel cut oatmeal.
For every 1 cup of dry oats, you want to add 3 cups of liquid.
So here’s steel cut oats stovetop directions:
- Let the water boil, then add the dry steel cut oats.
- Let it boil again, reduce the heat, cover and let the oatmeal cook for about 20 minutes. Stir occasionally.
Try to use a non stick sauce pan, since the oats get thick really quick and tend to stick to the bottom while cooking.
Make sure to stir the mix every now and then so it doesn’t stick to the bottom – non stick pan or not.
How to make Vanilla Protein Powder Oatmeal with Greek Yogurt
This recipe for vanilla proats is super easy to put together once you have the cooked steel cut oats or rolled oats.
Warm the riced cauliflower in the microwave for about 1 and half minute so it gets tender and mixes completely with the oats.
Then all you need to do is stir together all the ingredients in a bowl: cooked oatmeal, cauliflower rice, greek yogurt, protein powder, and water. Feel free to use almond milk if you wish.
Can you store these Greek Yogurt Oats?
Yes!
I always meal prep my steel cut oats, and you can do the same with regular rolled oats as well, for a quick breakfast.
Cook the oats, and let it cool. If you’re using fresh cauliflower, pulse it in a food processor to make the cauliflower rice.
Keep them both in the fridge, in separate airtight containers, for up to a week.
When you crave the hot greek yogurt oatmeal, microwave the oats for about a minute, add the cauliflower, then microwave for about 1 min 30-40 seconds.
Continue with the yogurt and vanilla whey protein oatmeal as per the recipe, and add a little extra yogurt to thin if needed.
Some toppings for this Yogurt Parfait Oatmeal:
- Fresh Fruit – Banana, strawberries, blueberries, raspberries
- Granola
- Chopped or Whole Nuts – Walnuts, Almonds
- Chia seeds or Pumpkin Seeds
- A pinch of cinnamon
So many ways to go here, but these are all clean ingredients, so you still have a healthy proats recipe.

Hot Parfait Greek Yogurt Protein Oats
Ingredients
- ⅓ cup Steel Cut Oats, Dry, 60g, or 1⅓ cup cooked: 312g
- 1 cup Water
- 1½ cups Cauliflower Rice, 140g
- ½ cup Non-fat Greek Yogurt, 112g
- 1 scoop Vanilla Protein Powder, 30g, about ⅓ cup
- 2-3 Tbsp Water
Add-ins and Toppings:
- Banana
- Blueberries
- Granola; Maple Cinnamon Egg White Granola, Recipe below
Instructions
Cook Oats:
- Bring water to boil in a saucepan.
- Stir in the oats and bring to a boil again.
- Cover with a lid, reduce heat to a low simmer, and let cook 20 minutes (or longer if needed) until soft and creamy. Stir occasionally to avoid sticking.
- If oats get too thick, add water to thin it out.
Assemble:
- Place cauliflower rice in a bowl and microwave on high for 1½ minutes until tender.
- In a large bowl, add cooked oats, cauliflower rice, greek yogurt, protein powder and water, and stir to combine. Add more water, a teaspoon at a time if needed.
- Reheat in microwave if too cold, top with all your favorites and serve hot!
