Raw Cookie dough protein bites as a no bake is probably the closest I’m going to get to thing that resembled a baked good right now.
Instead of using chocolate chips though, I made these protein balls with cacao nibs – raw nutrition and extra crunch too!
Ingredients for Low Carb Cookie Dough Protein Balls
These easy no bake cookie dough protein bites need just 5 ingredients and sre great for a homemade whey protein powder dessert recipe or even just a healthy snack!
- Cashew Butter; or Tahini
- Vanilla Protein Powder to make high protein truffles as well as replace the sweetener. I use Quest vanilla protein powder for this recipe; It’s sweetened with stevia and makes these cookie dough protein balls sugar free too!
- Almond Flour so these healthy cookie dough bites are actually low carb and keto.
- Unsweetened Almond Milk
- Raw Cacao Nibs or mini Chocolate Chips
- And then some more Chocolate Chips and Coconut Oil to coat. I recommend Lakanto for a sugar free option (code HAYLSKITCHEN gets you a discount too).
To make Cookie Dough Protein Balls Keto
Make sure you use tahini, almond flour and a keto friendly protein powder and you have the perfect keto protein balls rich in protein, fiber and healthy fats!
For Vegan Cookie Dough Protein Bites
You can easily make these cookie dough protein alls Vegan by using a compliant protein powder and dairy free chocolate chips (if you’re not using the cacao nibs) – since there’s no cream, no butter and no eggs in here.
How to make Healthy Cookie Dough Protein Balls with Whey Protein Powder
If you thought the list of ingredients was easy, well making these high protein energy balls is even easier since you’re just combining everything for this no bake recipe.
- Combine the cashew butter, vanilla protein powder, almond flour and almond milk in a bowl and mix it until it’s all uniform
- Add in the cacao nibs and then mix again with a big spoon until it forms a dough
Add more milk if the mix is too dry and more flour if it’s too wet.
- Spoon out some of the chocoate chip protein cookie dough, about a tablespoon worth, and roll it using your (clean) hands.
Now go and indulge!
For the chocolate coating to make protein truffles:
- Place the chocolate chips and coconut oil a shallow bowl and microwave for about 1 minute – stirring at 15 second intervals – until it’s completely melted. Or use the double boiler method. Let the chocolate cool a bit.
- Place the truffle balls in the melted chocolate, and use a fork to roll it around until it’s completely coated.
- Shake off excess chocolate and place on a parchment-lined baking sheet to harden.
Do this one truffle at a time.
How to store Cacao Nibs Cashew Butter Protein Balls
These chocolate chip cookie energy balls are best stored in the fridge since they do have a bit of milk in there.
Keep the cookie dough bites in an airtight container in the fridge for up to 1 week.
This recipe for keto bites is freezer friendly too!
Place the energy bites in an airtight sealed container and they should be good for 2-3 months. Be sure to let them thaw on the counter before eating!
Alternate ingredients for Healthy Cookie Dough Balls
- Almond Butter or Peanut Butter instead of Cashew also work great to still have the cookie dough flavors in these energy balls.
- To make cookie dough protein balls with oats, use oat flour instead of almond flour.
- For a nut-free option, use cashew flour instead of the almond flour.
- Replace cacao nibs with chocolate chips – I recommend Lakanto for a sugar free option (code HAYLSKITCHEN gets you a discount too).

Low Carb Cookie Dough Protein Balls (No Bake & Sugar Free)
Ingredients
- ½ cup Cashew Butter, 128g, or Tahini
- ¼ cup Vanilla Protein Powder, 22g
- 3 Tbsp Almond Flour, 15g
- 2 Tbsp Almond Milk, or other
- 2 Tbsp Cacao Nibs, or Sugar free Chocolate Chips
Chocolate Coating:
- 3 Tbsp Chocolate Chips, Sugar free recommended, 42g
- ¼ tsp Coconut Oil
Instructions
- Combine cashew butter, almond flour, vanilla protein powder and almond milk in a large bowl and mix.
- Add more milk if the mix is too dry or flour if the mix is too wet. It should be like cookie dough!
- Add in cacao nibs or chocolate chips and mix until uniform.
- Spoon out about a tablespoon of mixture at a time roll into balls using clean hands.Enjoy!
For optional chocolate coating:
- Melt chocolate chips and coconut oil in the microwave – stirring at 15 second intervals – or using a double boiler.
- Let chocolate cool a little and place truffles one at a time in the melted chocolate. Use 2 forks to roll it around until completely coated, shake off excess and place on baking sheet to harden.
