Jump to RecipeI saw someone on Instagram make apple pie cheesecake churro bombs or something of that sort, and knew I had to make something of that nature. Tried to reduce the complexity of the recipe though to make it a little simpler, and voila. These beautiful babies were born.
Packed with high protein, low fat, low carb, and sugar-free goodness, these delightful treats are sure to become your new favorite dessert. The best part? They’re made right in your trusty air fryer.
Ingredients for Mini Apple Pie Bombs:
This high protein mini apple pie bombs are made with a high protein dough and use protein powder and monkfruit sweetener instead of sugar for a healthy treat. Here’s the ingredients you need:
- Whole Wheat Pastry Flour
- Vanilla Protein Powder – This is the replacement for sugar. I use the whey-casein blend from Quest Nutrition, since its great for baking.
- Unflavored Protein Powder – Quest Nutrition here as well.
- Non-Fat Greek Yogurt for extra protein
- Almond milk
- Cold Butter this has to be straight out of the fridge and cold
- Baking Powder
For the Cinnamon Sugar Apples:
- Apples
- Cinnamon
- Zero Calorie Brown Sugar: Lakanto Brown is the one I use (code HAYLSKITCHEN should give you a discount)
- A bit of Water
For the coating:
- Melted Butter
- Zero Calorie Monkfruit Sweetener. I used the one from Lakanto (use my code HAYLSKITCHEN) since it’s made with monkfruit and is sugar free.
How to make Air Fryer Apple Pie Bites with Protein Powder
These air fruer apple pie bites are made with protein powder instead of sugar and are actually super easy to make! Here’s the steps.
- Prepare the Apple Pie Filling:
In a saucepan over medium heat, combine the diced apples, sweetener, ground cinnamon and water.
Stir occasionally and cook until the apples are soft and the mixture thickens (about 10-12 minutes).
Remove from heat and let it cool.
- Make the Pie Dough:
In a mixing bowl, combine flour, vanilla protein powder, unflavored protein powder and baking powder.
Add the yogurt, milk and cold grater butter, then mix until a dough forms.
- Assemble the Mini Apple Pie Bombs:
Preheat your air fryer to 375°F
Take a small portion of the dough and flatten it in the palm of your hand.
Place a teaspoon of the prepared apple pie filling in the center.
Fold the dough around the filling, sealing it to form a small ball.
Repeat this process for all the dough and filling.
- Air Fry the Mini Apple Pie Bombs:
Spray air fryer basket with oil spray.
Place the pie bombs in the air fryer basket, ensuring they don’t touch.
Air fry for 5 minutes or until they turn golden brown and crisp.
- Coat the Mini Apple Pie Bombs:
Brush apple pie bites with melted butter.
Roll each mini apple pie bomb in the sweetener until it’s well coated.
Tips for the perfect Protein Apple Pie Bombs
This is a really easy recipe for protein apple pie bombs, but here’s some pointers to get it perfect:
- Let cinnamon apples cool completely before filling dough so they don’t soften the dough. Make ahead of time and keep overnight if needed.
- Make sure to use cold butter for this air fryer apple pie bites recipe since it creates those nice airy pockets in the middle when exposed to the high temperature.
- Dough should be moist – add enough moisture from the milk and yogurt to prevent from being too dry.
- Don’t over-mix the dough or add too much flour – this will give you dry and tough apple pie bomns. It should take about 10 seconds.
- Preheat air fryer so the air fryer apple pie bites start cooking immediately and butter does not melt inside.
For a Baked Proten Apple Pie Bites Recipe
If you don’t have an air fryer, you can also make these protein apple pie bites in the oven. Place apple pie bombs on a parchment lined baking sheet and bake the at 395°F for about 7-8 minutes.

How to store Air Fryer Apple Pie Bombs
These mini air fryer apple pie bombs must be stored in tan airtight container.
Room Temperature: Store on the countertop for 2 days
Fridge: Up to 5 days in the refrigerator, but be sure to warm before having!
Alternatives for Healthy Apple Pie Bombs
I made these healthy apple pie bombs with the ingredients specified, but here are some alternatives to try:
- Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, with the same amount by weight, not cups.
- Unflavored Protein Powder: Use 2 Tbsp flour, but also reduce the milk to 3 Tbsp
- Greek Yogurt: Coconut yogurt
- Almond Milk: Any other milk
- Sugar-free Sweetener: Regular sugar and brown sugar
For Vegan Mini Apple Pie Bombs
To make these mini apple pie bombs vegan, use Coconut yogurt instead of Greek yogurt, Plant-based protein powder and Vegan butter. Be sure to taste the dough a bit and see if it is sweet enough.

Mini Apple Pie Bombs – The Best Healthy Recipe
Ingredients
- ⅔ cup Whole Wheat Pastry Flour, see post for sub, 80g
- ⅓ cup Vanilla Protein Powder, Whey-casein, 30g
- 2 Tbsp Unflavored Protein Powder, Whey-casein, 11g
- 1 tsp Baking Powder
- 1 Tbsp Cold Butter, Grated, 14g
- ¼ cup Unsweetened Almond Milk, 60ml
- ⅓ cup Non-fat Greek Yogurt, 75g
Apples
- ¾ cup Chopped Apples, 84g
- 2 Tbsp Water, 30ml
- ½ Tbsp Zero Calorie Brown Sugar, 6g, or regular
- ⅛ tsp Cinnamon
Top:
- 1 tsp Melted Butter, 5g
- 1 Tbsp Zero Calorie Granulated Sugar, 12g
Instructions
Apples:
- Heat small skillet over medium heat, add apples, 1 Tbsp water, sugar, cinnamon, and cook about 3-4 min until slightly caramelized (shaking every now and then).
- Transfer to plate and let cool 5 min.
Dough:
- In a bowl, combine flour, protein powders and baking powder.
- Add butter, yogurt and milk – little at a time – and mix with a spoon to until just combined. You should have a smooth dough.
- Lightly flour a work surface, transfer dough to surface and knead until smooth – about 10 seconds.DO NOT OVER-MIX or it will make the dough tough.
- Flatten out into rectangle 1-1½” thick.Cut into 10 pieces.
Assemble:
- Flatten, make depression in middle, place some apples mix in middle, cover with remaining dough and roll into balls.
- Preheat air fryer to 375°F.Spray basket with oil spray.
- Place balls in air fryer. (keep extras in fridge if working in batches so butter in dough doesn’t melt)
- Air fry 4-5 minutes until golden-brown.
- Brush with melted butter, roll in granulated sugar and enjoy!
