And I’m not the only one here; Some of you have tried out that collagen peptides brownie recipe, left comments on it, and seemed to love it as well!
So I just had to adapt that into something more funky; A hint of coffee and a bit of a recipe switch up and this mocha collagen brownie recipe was born.
Ingredients for Mocha Collagen Brownies Recipe
These fudgy mocha collagen brownies are made without protein powder and a few healthy ingredients; No oil, no sugar and gluten free too; The perfect collagen dessert recipe!
- Unflavored Collagen Peptides needed for high protein brownies. I use the one from Further Foods (HAYLSKITCHEN gives you a discount)

- Gluten Free (All Purpose) Baking Flour – or a regular all purpose flour

- A bit of Coconut Flour
- Instant Coffee
- Creamy Peanut Butter
- Non-fat Greek Yogurt contributes to the oil-free part of these high protein brownies since it adds the moisture, and also extra protein
- Sugar free Maple Syrup for low calorie protein brownie with no sugar!

- Almond Milk or regular milk
- Vanilla Extract
- Baking Soda
- Optionally Chopped Hazelnuts
What can I substitute for collagen powder in baking?
This healthy brownies recipe is designed to be made with collagen powder, and you cannot substitute anything else for it here. Please do not try to use whey protein as a substitute for collagen here, since since they both bake very differently, and your brownies will not turn out the same.

Tips for Mocha Protein Brownies without Protein Powder?
This recipe for mocha protein brownies with collagen peptides powder is extremely easy to make; just mix and bake! Here’s some tips to get it right though!
- Use room temperature egg whites, milk and yogurt;
This is so the wet ingredients and dry ingredients can mix well.
- Room temperature drippy almond butter so it mixes well with the wet ingredients and does not clump.
- Whisk dry ingredients well before adding to wet; Coconut flour and cocoa powder could be in lumps.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar collagen protein brownie.
- Let brownie cool completely before removing from pan.
Pro Tip!
- Use a plastic knife to cut the brownies; these collagen protein brownies are quite fudgy and will stick to a metal knife when cutting.
How to store Coffee Collagen Powder Brownies?
This high protein chocolate coffee collagen brownie recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!
Store mocha collagen powder brownies at room temperature in an airtight container for 1-2 days or in the fridge for a week.
To freeze collagen peptides brownies, individually wrap in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.

I do have some alternatives you can try. I haven’t testing them all, so I can’t say how your recipe might turn out.
- 1:1 Gluten Free Baking Flour: All purpose flour or Whole Wheat Pastry Flour, in the same amount by weight, not cups.
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Peanut Butter: Runny Almond Butter, Cashew Butter, Tahini or any nut or seed butter.
- Sugar Free Maple Syrup: Regular maple syrup instead of sugar free, or honey.
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk

Mocha Collagen Brownies – High Protein, Sugar Free!
Ingredients
- Unflavored Collagen
- Unsweetened Cocoa Powder
- 1:1 Gluten Free Baking Flour
- Zero Calorie 1:1 Sugar Replacement
- Coconut Flour
- Instant Coffee
- Baking Soda
- Creamy Peanut Butter
- Unsweetened Almond Milk
- Non-fat Greek Yogurt
- Maple Syrup
- Egg Whites
- Vanilla Extract
- Optional: Chopped Hazelnuts
Instructions
- Preheat oven to 350°F and line an 8” x 8” baking pan with parchment paper.
- In a bowl, whisk collagen powder, unsweetened cocoa powder, gluten free flour, zero calorie sugar replacement, coconut flour, instant coffee and baking soda.
- In a large bowl, whisk together peanut butter, almond milk, Greek yogurt, maple syrup, egg whites and vanilla.
- Add dry mix to wet, and gently fold until combined. Batter should be slightly runny.Fold in most chopped hazelnuts (if using).
- Pour batter into baking pan and top with more hazelnuts.
- Bake for 27-30 minutes; Top should be set and toothpick inserted into the center should come out mostly dry.
- Remove from oven and let cool completely.Cut into slices and enjoy (use plastic knife)!
Notes
- For extra gooey brownies, remove at 25 minutes when the tester comes out slightly moist.

Oh my gosh I have seen matcha protein Blondies, but never seen matcha protein brownies before! Love this idea!
