This recipe probably puts together all my favorite type of recipes into one: brownies, chocolate, fudginess, baked goods, protein, all of it!
Kinda like a cross between a molten lava cake and brownie and protein ball recipe, so pretty much the perfect sugar-craving satisfier.
And plus it’s got extra benefits for joints and hair and whatnot because these fudge brownie protein balls also have collagen in the mix!
Ingredients for Molten Lava Brownie Protein Balls:
These lava chocolate brownie protein balls are made with a few simple and healthy ingredients!
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Chocolate Protein Powder for high protein brownie ball, and also replace some of the sweetener.
I used whey-casein Quest protein powder. - Unflavored Protein Powder for even more protein. I recommend the Multi-purpose mix protein powder from Quest Nutrition.
- A bit of Coconut Flour
- Unsweetened Cocoa Powder
- Flaxseed meal and water to make a flax egg; Keeps this Vegan
- Creamy Almond Butter
- Unsweetened Almond Milk
- Sugar free Chopped Chocolate or Chocolate Chips – I use monk fruit sweetened ones from Lakanto here (HAYLSKITCHEN for a discount here). Lily’s is another sugar-free option!
Tips to make Chocolate Lava Brownie Baked Protein Balls
The key to getting a gooey molten lava brownie center in the these chocolate protein balls, is baking the protein ball mixture.
It really is quite an easy process though, and here’s some pointers.
- Let the flax egg rest and form, so that it gets thick and binds the mixture.
- Mix the dry ingredients first so everything comes together well.
- Roll chocolate completely in brownie ball mix so it doesn’t ooze out.
To store Molten Lava Protein Balls
Just like brownies, molten lava brownie protein bites can be stored on the countertop, in the fridge or freezer. Let the protein brownie bites cool completely before storing.
Store chocolate lava protein balls in an airtight container on the countertop for about 2-3 days and in the fridge for 1 week.
To freeze, place cooled baked protein balls in an airtight sealed container or freezer-safe zipper bags in the freezer for 2-3 months. Let them thaw on the counter before eating!
Alternative ingredients for Chocolate Brownie Protein Balls:
I made these protein balls with the particular list of ingredients for the perfect chocolate lava brownie effect, but here’s some alternatives you can try:
- Oat flour: Use almond flour, all purpose flour or whole wheat pastry flour
- Unflavored Collagen: Almond flour
- Protein Powder: Vanilla or any other flavored protein powder.
- Coconut flour: Try using about 3 Tbsp of Almond Flour. I haven’t tried this myself though.
- Almond Butter: Any nut or seed butter – peanut butter, cashew butter, etc.

Molten Lava Brownie Protein Balls you will Love
Ingredients
- 1 Tbsp Flaxseed Meal, 7g
- 2 Tbsp Water, 30g
- ⅓ cup Oat Flour, 30g, see post for subs
- 3 Tbsp Coconut Flour, about 21g
- ¼ cup Chocolate Protein Powder, Whey-Casein, 22g
- 2 Tbsp Unflavored Protein Powder, Whey-Casein, 11g
- 1½ Tbsp Unsweetened Cocoa, 7-8g
- 1 scoop Unflavored Collagen, 10g, see post for subs
- 3 Tbsp Almond Milk
- 1 Tbsp Creamy Almond Butter, 16g
- ½ oz Chopped Chocolate, 14g, Sugar-free recommended
Instructions
- Preheat oven to 350°F and line a baking tray with parchment paper.
- In a large bowl, combine flaxseed meal and water and let rest 5 mins to thicken.
- In a bowl, mix dry ingredients (chocolate protein powder, unflavored protein powder, oat flour, coconut flour, unsweetened cocoa powder and collagen) and mix.
- Add in flaxseed mix, almond butter and milk – about ½ tbsp at a time – and mix to form a tick batter.Add more milk 1 tsp at a time if it is too dry, coconut flour if too wet.
- Divide mix into 9 portions.Roll into balls, flatten into discs, place chocolate chips in, cover and roll into ball again.
- Bake 8-9 minutes; Batter should be cooked on the outside.
