Jump to RecipeInspiration for this good stuff came from the pack of Blueberry Cobbler flavored peanut butter powder I got from Flavored PB Co. Not even kidding, it really is a mix of peanut butter and blueberry, and worked perfectly in this dessert.
It was soft and smooth and creamy and everything you want in a delightful little treat, but very high in protein from those 2 layers of protein pudding!
Ingredients for No Bake Blueberry Lasagna
This high protein No bake Blueberry Lasagna dessert is made with a low sugar and low fat graham base, and high protein vanilla and peanut butter puddings and a blueberry topping. A real simple layered dessert here with easy ingredients too.
Blueberry Jam Topping:
- Fresh or frozen Blueberries
- A bit of Water
- Vanilla Protein Powder: Quest Nutrition whey-casein Vanilla for me
The Graham Cracker Base
- Crushed Graham Crackers
- Runny Almond Butter (no butter to keep this recipe low fat)

The Vanilla Protein Pudding
- Non-fat Greek Yogurt
- Vanilla Protein Powder: source of sweetness and extra boost of protein in this layered dessert. Quest Nutrition Vanilla again here.
- Vanilla Instant Pudding Mix: I used this sugar free and fat free one from Simply Delish. Jello is a great option too.
- A bit of Unsweetened Almond Milk
The Peanut Butter Protein Pudding
- Non-fat Greek Yogurt
- Peanut Butter Protein Powder: Quest Nutrition Peanut Butter Protein Powder here, or use Quest Nutrition Vanilla here.
- Vanilla Instant Pudding Mix: Simply Delish or Jello here too
- Blueberry flavored Peanut Butter Powder (peanut powder), or regular
I used Blueberry Cobbler Flavored PB Co peanut powder.

- A bit of Unsweetened Almond Milk
Tips for Blueberry Lasagna Dessert Recipe with Protein Powder
This no bake blueberry dessert recipe is really very easy to make, but here’s some pointers so you get it perfect!
The blueberry jam:
- Crush the berries when mixture gets hot so that it forms a smooth jam
- Take off heat when slightly thick, then mix in protein powder.
- Wait for jam to cool completely before spreading on pudding layers or the pudding will soften and melt.
For the graham base in this Low Carb blueberry lasagna:
- Use a food processor to crush grahams and mix ingredients; This way you get uniform graham cracker crumbs, and the almond butter and maple syrup also mix well into the mixture.
- Make sure base is a bit sticky or it will crumble apart and not hold as a base. Add more syup or almond butter if too dry.
For the Pudding layers
- Use whey-casein protein powder not whey since it mixes best with yogurt. Amount of milk used for whey would also be less than specified, so adjust accordingly,
- Mix the dry ingredients first, and then add the yogurt and milk so that everything mixes smooth.
How to store Homemade Blueberry Delight?
This high protein homemade blueberry delight dessert needs to be stored in the fridge since it has Greek yogurt-based peanut butter and vanilla pudding layers.
Keep this blueberry delight recipe with graham cracker crust in an airtight container in the fridge for upto 4 days.
You can freeze this layered blueberry dessert
To freeze healthy layered blueberry dessert, slice and wrap each piece in plastic wrap, and then place in freezer-safe zipper bags.
Thaw in fridge before eating.

- Flavored Almond Butter: Regular almond butter, peanut butter, cashew butter or even tahini
Pudding Layers:
- Almond Milk: Regular milk
- Greek Yogurt: Coconut Yogurt
- Peanut Butter Powder: Regular Peanut Butter, but also reduce milk to 2 Tbsp

Ingredients
Base:
- 6 sheets Graham Crackers, Crushed, 90g
- 1 Tbsp Flavored Almond Butter, 16g, Recommendation below
- 1 Tbsp Sugar-free Maple Syrup, 15ml, Recommendation below
Vanilla Pudding:
- 1 cup Non-fat Greek Yogurt, 225g
- ⅓ cup Unsweetened Almond Milk, 80ml
- ½ cup Vanilla Protein Powder, Whey-casein, 45g
- 2 Tbsp Vanilla Instant Pudding Mix, 15g, Sugar free
Peanut Butter Pudding:
- 1 cup Non-fat Greek Yogurt, 225g
- ⅓ cup Peanut Butter Protein Powder, Whey-casein, 30g, or Vanilla
- ¼ cup Blueberry flavored Peanut Butter Powder, 24g, or Regular
- 2 Tbsp Vanilla Instant Pudding Mix, 15g, Sugar free
- ¼ cup Unsweetened Almond Milk, 80ml
Blueberry Topping:
- 1¼ cup Blueberries, 187g
- 2 tsp Water, 10ml
- 1 Tbsp Vanilla Protein Powder, Whey-casein, 5g
Instructions
Jam:
- Heat blueberries and water in a small saucepan over medium, stirring occasionally until fruit begins to break down and bubble, about 7-10 min.Use a spoon or potato masher to mash to desired consistency.
- Remove from heat, stir in protein powder and let cool.
Base:
- Prepare an 8” x 8” pan or baking dish.
- In a bowl, combine crushed graham crackers, almond butter, maple syrup.
- Transfer to pan, and use back of spoon/sparula to press down and spread.
Vanilla Pudding:
- In a bowl, mix Greek yogurt, protein powder, vanilla instant pudding, and milk until smooth.Add milk a little at a time until pudding consistency is reached.
- Spread over base.
Peanut Butter Pudding:
- In a bowl, mix Greek yogurt, protein powder, peanut butter powder, vanilla instant pudding, and milk until smooth.Add milk a little at a time until pudding consistency is reached.
- Spread over vanilla pudding layer.
Topping:
- Let jam cool completely first.
- Spread over peanut butter layer, slice into 12 and serve.
