This single serve no bake chocolate protein cookie is made with simple and healthy ingredients, and has no sugar, butter or eggs.
- Chocolate Protein Powder
I used whey isolate Chocolate protein powder from Isopure. - Unsweetened Cocoa Powder
- Coconut Flour
- Some Creamy Almond Butter; I recommend Caramel Cappucchio Crunch Almond Butter from American Dream Nut Butter.

- Vanilla Extract
- Chocolate Chips – I use sugar free ones from Lily’s
How to make No Bake Chocolate Cookie with Protein Powder
This no bake chocolate cookie with protein powder is super easy – just mix it all in a bowl.
- Combine All the ingredients (except chocolate chips)
Mix protein powder, cocoa powder, coconut flour, almond butter, milk (add milk little at a time) and vanilla extract in a bowl. - Mix to form a thick dough ball.
Don’t add too much water; The mix will come together.
Add more milk if too dry, more coconut flour if too wet. - Add in chocolate chips and mix.
- Shape into a cookie.
Tips for the perfect No Bake Oat Cookies with Protein Powder
These no bake protein powder oatmeal cookies are really easy to make, but here’s some tips to get them perfect!
- Use whey protein powder since it works well with the ratio of ingredients here; Whey absorbs less moisture, so you would have to increase the amount of milk if you use whey-casein or plant-based.
- Add milk little at a time or the mix will get too runny. Only add more if needed.
Keep mixing; the dough will come together.
- Taste the mixture and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the dough and have sugar free no bake chocolate protein cookie.
To store Low Carb Chocolate Protein Cookie
This recipe makes a single low carb chocolate protein cookie, but you can also make extras and store these. Keep the cookies in an airtight container for up to 5 days in the fridge and up to 3 months in the freezer.
To freeze, stack healthy no bake chocolate cookies with parchment paper in between, and place in airtight containers or freezer-safe zipper bags.

- ¼ cup Coconut Flour, 28g
- 1 tsp Cocoa Powder, 2g
- 2 tsp Creamy Almond Butter, 10g

Instructions
- In a bowl, combine chocolate protein powder, coconut flour, cocoa powder, almond butter, almond milk and vanilla.Add milk little at a time. More if mix is too dry, extra coconut flour if too wet.
