Ingredients for Pancake Mix Protein Brownies
These pancake mix protein brownies are made with a few healthy and simple ingredients.
- Protein Pancake Mix – I used the Kodiak Cakes Buttermilk Protein Pancake Mix for this pancake brownie.
You can also make this brownie recipe any other just add water pancake mix. - Chocolate Protein Powder needed for high protein brownie and also replaces most of the ‘sugar’. I used part whey-caesin Chocolate Milkshake protein powder from Quest Nutrition, and part Chocolate Protein World Whey for this recipe.

- Non-fat Greek Yogurt contributes to the oil-free part of these high protein brownies since it adds the moisture, and also extra protein
- Almond Milk or regular milk
- Runny Peanut Butter (no butter or oil to keep this recipe low fat)

Tips for Perfect Kodiak Cakes Pancake Mix Brownies
These brownies with kodiak cakes pancake mix and protein powder are rich and tasty and actually very easy to make!
- Use room temperature milk and yogurt;
This is so the wet ingredients and dry ingredients of the brownie batter can mix well.
- Use Runny Peanut Butter also so that it mixes well into the batter
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder will make the fudgy brownies tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy fudgy brownies.
- Don’t over-bake the brownies or they might get tough; Remove when the tester/knife comes out still moist.
Underbaking a little is okay.
- Let brownies cool completely before frosting or frosting will melt away.
How to store Pancake Mix Brownies?
This high protein pancake mix brownie recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!
Store protein powder pancake mix brownies at room temperature in an airtight container for 1-2 days or in the fridge for a week.
To freeze healthy pancake brownies, individually wrap in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.
Alternatives for Healthy Pancake Brownie Recipe
For the perfect healthy pancake brownies, I used protein powder, pancake mix and cocoa powder – no chocolate – and I would highly suggest using the ingredients recommended.
I do have some alternatives you can try. I haven’t testing them all, so I can’t say how the recipe might turn out.
- Protein Pancake Mix: Use any regular pancake mix; You can make healthy protein pancake brownies with Bisquick or Krusteaz too.
A good base pancake recipe would work as well. - Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Peanut Butter: Almond Butter, Cashew Butter or any nut or seed butter.

Ingredients
- ½ cup + 2 Tbsp Unsweetened Cocoa Powder, or Cacao Powder, 50g
- ¼ cup Whey-Caesin Chocolate Protein Powder, 23g
- ¼ cup Whey Chocolate Protein Powder, 23g
- ¼ cup Zero Calorie 1:1 Sugar Replacement, 48g
- ½ cup Protein Pancake Mix, or any just-add-water pancake mix, weighed ~53g
- 1¼ cup Non-fat Greek Yogurt, 281g
- ½ cup Unsweetened Almond Milk, 120ml
- 3 Tbsp Peanut Butter, 48g, see post for subs
Pancake Batter:
- ½ cup Protein Pancake Mix, or any just-add-water pancake mix, weighed ~53g
- 2 Tbsp Whey-Caesin Vanilla Protein Powder, 11g
- ¼ cup Unsweetened Almond Milk, 60ml
- 2 Egg Whites, 62g
- 1 Tbsp Peanut Butter, 16g, see post for subs
Instructions
- Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
- In a bowl, whisk cocoa powder, chocolate protein powders, zero calorie sugar replacement, and pancake mix.
- In a large bowl, whisk together Greek yogurt and almond milk.
- Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the brownie dense.
- Add in peanut butter and fold.Batter should be thick.
- Pancake batter: In another bowl, mix pancake mix, protein powder, milk, egg whites and peanut butter.
- Scoop out both batters into pan (alternating).
- Bake for 22 minutes; Toothpick inserted into the center should come out slightly wet.
- Remove from oven and let cool completely.

THIS recipe! Wow! these are amazing as breakfast warmed up with a little sugar free syrup, eaten cold as a snack, or warmed up for dessert and topped with a little cashew or peanut butter. They are super fudgy (which I love). I swapped PB for cashew butter & used all Quest protein powders & Kodiak gluten free mix. I’m gonna be making these at least once a month from now on. So easy to throw together and so delish.
