I wouldn’t be surprised if that’s you because I actually had quite a hard time finding a recipe for pancake muffins without banana – most options online have a ton of them.
Well, this one’s got super simple ingredients and is definitely quite the lifesaver!
Ingredients for Pancake Mix Protein Muffins
These pancake mix protein muffins are made with just 5 ingredients and are perfect for a quick hacky high protein breakfast recipe!

How to make Kodiak Pancake Muffins with No Banana
This recipe for protein muffins with Kodiak pancake mix has no banana making it even simpler to make, since you don’t need to mash anything.
- Preheat your oven to 400°F and line 6 cups of a muffin tin with cupcake lines. Lightly spray the insides with oil spray (so the muffins come off easily)
You can also use a non-stick pan.
- Whisk the milk, Greek yogurt and eggin a large bowl.
- Add the dry ingredients: protein pancake mix and protein powder, and mix. You should have a thick muffin batter; Add a tablespoon more milk or pancake mix if the batter is too thick or wet respectively.
Don’t over-mix of the pancakes will be dense from the protein powder.
- Divide the mix among the muffin cups, filling them about ¾ way to the top.
Optionally, top with dried nuts/seeds or sugar free chocolate chips.
For the perfect high-rise pancake mix muffins:
- Bake the muffins for 5 minutes at 400°F, then
Lower temperature to 350°F and bake another 13-14 minutes (total of 18-19 mins) until a tester inserted into the center comes out dry.
How to store Kodiak Pancake Mix Muffins
These weight watchers kodiak muffins can be stored on the countertop, in the fridge or the freezer for a healthy breakfast or dessert.
Keep the kodiak pancake mix protein muffins in an airtight container on the countertop for up to 3 days or fridge for 6 days.
To freeze, wrap healthy pancake muffins in plastic wrap, place in a freezer-safe zipper bag, and feeze up to 3 months. Leave them on the countertop or place them in the fridge overnight to thaw. I would not recommend using the microwave.
Tips for perfect High Protein Pancake Muffins Recipe
This pancake muffins recipe with protein powder is quite easy, and here’s some tips to make sure they turn out perfect!
- Use room temperature eggs, yogurt and milk;
his is so the wet ingredients and dry ingredients can mix well.
- Don’t overmix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder – will make it tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free protein muffins.
- Lightly grease the cupcake liners or muffin pan with cooking spray – this will allow the protein powder pancake mix muffins to come off easily!
- Bake for 5 minutes at 400°F then lower the heat to 350°F to and continue to bake for another 13 minutes (the total time should be about 18 minutes).
That initial hot air makes the tops rise, and then the lower temperature lets the muffins continue to cook on the inside.
Alternate Ingredients for Healthy Pancake Muffins with Pancake Mix and Protein Powder
I made these protein pancake bites with ProteinWorld as well as Kodiak Pancake Mix, and they worked out well with this set of ingredients. Here’s some alternatives you can try though.
- Protein Pancake Mix: Use any regular pancake mix; You can make healthy protein bisquick pancake muffins too with this recipe.
A good base pancake recipe would work as well; I have a healthy whole wheat pancake recipe that would work just great here! Add some protein powder to make them high protein pancake bites in place of the stevia (you might have to play around with the ratios here).
- Almond milk: Any regular milk
- Greek Yogurt: Applesauce, Banana or Pumpkin Puree
Or Coconut yogurt for a dairy free recipe - Egg: To make pancake mix muffins with no eggs, try a flax egg (1 Tbsp flaxseed meal + 3Tbsp water let rest 10 mins) or 3 Tbsp aquafaba. I haven’t given this a try yet though.

Pancake Mix Protein Muffins – 5 Ingredients only!
Ingredients
- ¾-1 cup Protein Pancake Mix, or any just-add-water pancake mix, weighed 100g
- ¼ cup Protein Powder, 22g
- 6 Tbsp Almond Milk
- ¼ cup Non fat Greek Yogurt, 56g
- 1 Egg, or liquid egg substitute
- Optional toppings: 1-2 Tbsp Chocolate Chips, Nuts or Seeds
Instructions
- Preheat oven to 400°F, line 6 cups of a muffin pan with cupcake liners, and lightly spray insides with cooking spray (or use non-stick pan).
- In a large bowl, whisk together milk, Greek yogurt and egg.
- Add in protein pancake mix and protein powder and fold to combine.Don’t over-mix or muffins will be dense.Batter should be fairly thick; Add 1-2 Tbsp water if it’s too thick, or 1 Tbsp more pancake mix if it’s too runny.
- Divide the batter among muffin cups, about ¾ way to the top. Sprinkle optional toppings.
- Bake for 5 minutes, then reduce temperature to 350°F (leaving muffins in oven) and bake another 13 minutes. A toothpick inserted into center should come out dry.
- Cool for 5 minutes, then remove from pan. Transfer to a wire rack to cool completely, about 10 minutes, and enjoy.

I doubled this recipe and used vegan protein powder, added peanut butter, half with chocolate chips, half blueberries. Everyone loved it, even the kids! (Chocolate was the fav)

These worked great for me. My oven runs hot, so they were a little brown on top. Next time I’ll reduce the heat a bit, but that’s my problem not the recipe. I tried this recipe with Pamcakes Pancake mix and also added 4T PB2. Yum!

Want to try this but I got really turned off by the bit where you said to taste the batter if a sweetener is needed. What about the raw egg that is in it??? Is that not a concern?

I was a little skeptical of these to start with cuz there wasn’t any sweetener or anything but boy was I wrong. Had to double batch these the second time around cuz 1 at a time was just not enough 🙂
