I really wasn’t expecting something this good because I wasn’t always a pb & j fan, but this was a steller protein fudge recipe!
What you need for Peanut Butter and Jelly Protein Fudge
This healthy peanut butter and jelly protein fudge is actually made with a few simple ingredients and has no condensed milk or marshmallow or any form of sugar!
Here’s some more details:
- Creamy Peanut Butter! I used American Dream Nut Butter Grandma’s Peanut Butter Fudge Peanut Butter; It actually tastes like a brownie! ADNB also has a lot of other flavors that would go perfect here. Code HAYLSKITCHEN gets you a discount!
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Vanilla Protein Powder – for high protein fudge recipe, and also replace the sweetener.

How to store Easy Peanut Butter Strawberry Jam Fudge
Since this healthy peanut butter and strawberry jam fudge bar is made without chocolate or condensed milk, it will get soft at room temperature and needs to be stored in the fridge or freezer.
Store peanut butter protein fudge in the fridge in an airtight container for up to 7 days.
To freeze protein pb & j fudge bars, place sliced fudge bars in a zipper bag with pieces of parchment paper in between and keep in the freezer for 2-3 months. You can also use a freezer safe airtight container here.
Be sure to let the frozen peanut butter jelly fudge soften for a few hours in the fridge or at room temperature so it’s not too hard to bite into.
Tips for the perfect PB & J Protein Fudge
- Make sure you use room temperature runny peanut butter since a hard one out of the fridge won’t combine well.
- Allow the protein jam to cool before spreading over the peanut butter layer.
- Let the fudge + jam layer harden before layering since it will be fairly difficult to do this at room temperature.
Let the combination also set for a bit so it hardens and is easy to cut.
Alternatives for Healthy Peanut Butter Jelly Fudge Recipe
I made this healthy and low calorie peanut butter and jelly fudge with the ingredients and brands I recommended above, but here’s some alternatives you can try.
- Peanut Butter Powder: ¼ cup Peanut Butter + ¼ cup Coconut Flour (I haven’t tried this yet, so you might want to play around with the ratios here)
- Coconut Flour: About 3x the amount of almond flour
And for the Jam:
- Raspberries: Strawberries, Blackberries, Blueberries
- Unflavored Collagen: Some cornstarch to thicken (you need to try out the ratios here)
- Vanilla Protein Powder: Powdered Sweetener. I recommend Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too)
Keto and Low Carb
This peanut butter jelly fudge bar recipe is already low carb and keto friendly; Just make sure you use a stevia sweetened protein powder.
Vegan PB&J Fudge!
This is pb&j fudge recipe is without condensed milk or marshmallows, and can easily turned into a Vegan protein fudge by using a compliant nut butter and protein powder and collagen.

Peanut Butter and Jelly Protein Fudge
Ingredients
- 1 cup Peanut Butter, 256g, recommendation below
- 6 Tbsp Peanut Butter Powder, 36g
- ⅓ cup Vanilla Protein Powder, Whey, 30g, 1 scoop
- ¼ cup Coconut Flour, 28g
Protein Jam:
- 1 cup Raspberries, 124g, or other fruit
- 1 Tbsp Vanilla Protein Powder, 6g
- 1 scoop Unflavored Collagen, 10g
- Stevia Sweetener, 1-2 tsp sugar worth (Use your brand’s Conversion Chart)
Instructions
- Line a 9×9” pan with parchment paper (leave an overhang to lift out later).
- In a medium bowl, combine the peanut butter, peanut butter powder, protein powder and coconut flour and mix until smooth.
- Transfer mixture into prepared loaf pan, press down and use back of spoon to smoothen.
Jam:
- Heat berries and water in a small saucepan over medium, stirring occasionally until fruit begins to break down and bubble, about 7-10 min.
- Use a whisk or potato masher to mash to desired consistency.
- Remove from heat, stir in protein powder, collagen and sweetener(to taste) and let cool (place in fridge).
Assemble:
- Cut peanut butter layer into two halves.
- Spread Jam on one half and smoothen with back of spoon.
- Place pan in freezer for about 20 minutes to slightly harden.
- Place clear half of PB layer (without jam) on jammed half and press down. (Use parchment paper on top and press with back of spoon to seal layers).
- Slice into 24 pieces.
