Went for a low fat and low calorie peanut butter chocolate protein cookie here though with peanut butter powder, but still got that amazing flavor.
And of course – with a gooey molten chocolate lava center.. It really is hard to say no to!
Ingredients for Peanut Butter Chocolate Lava Protein Cookie Recipe
This healthy peanut butter chocolate protein cookie recipe has just a few simple ingredients, and is eggless, has no butter or oil and no sugar either! A great vegan protein cookie recipe too.
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Vanilla Protein Powder for healthy, whey protein protein cookie that’s also sugar free
I used Isopure Zero Carb Creamy Vanilla Protein Powder. - Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly low calorie protein cookie. Quest Nutrition whey-caesin again here.
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit or PB2 too.
- Unsweetened Applesauce for a soft sugar cookie without butter
- Non-fat Greek Yogurt contributes to the oil-free part of these protein cookies since it adds the moisture, and also extra protein
- Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
- Baking Powder
For the chocolate lava cookie filling:
- Chopped Chocolate (or Chocolate Chips) for cookies with a gooey chocolate center. I’d recommend the sugar free ones from Lakanto. The code HAYLSKITCHEN works here too.

How to make a Single Serving Peanut Butter Protein Powder Cookie
To make one of these healthy protein powder peanut butter cookies, you mix the protein cookie dough, spread it out, add in the chocolate filling and just bake!
- Preheat your oven to 350°F and line a baking pan with parchment paper.
- Mix your dry ingredients – oat flour, vanilla protein powder, unflavored protein powder, peanut butter powder and baking powder – in a bowl.
- Add in wet ingredients: applesauce, Greek yogurt, peanut butter and almond milk.
- Transfer ½ protein peanut butter cookie dough onto the baking sheet in a round cookie shape.
- Place chocolate chips in the middle to form the molten chocolate center of the protein cookie.
- Cover with remaining protein cookie dough and shape it into a giant chocolate peanut butter protein cookie for one.
- Bake for 13-14 min. You might need a minute extra; make sure the top is completely dry to touch.
Let it cool a bit, and indulge!
Store Peanut Butter Cup Protein Cookie
This peanut butter cup protein cookie recipe is a giant single serve and is best had fresh.
If you want to store it, keep the low calorie peanut butter cookie in an airtight container and keep on the countertop for up to 2 days, or fridge 5 days.
To freeze healthy peanut butter cookie, place in freezer-safe zipper bag and keep 1-2 months; Don’t forget to thaw before eating!
Alternates for this Single Serve Healthy Peanut Butter Cookie Recipe
I recommend making this healthy, low calorie peanut butter cookie using the protein powder and other ingredients and products listed – since it gives the best results.
If you need other options for the flours and such, here’s some alternatives:
- Oat flour: Use Whole wheat pastry flour or even all purpose flour. A 1:1 Gluten-free all purpose baking flour would work too. Go by the weight for these substitutions.
You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it. - Unflavored Protein Powder: More flour (also 1 Tbsp)
- Unsweetened Applesauce: Mashed Banana
- Peanut Butter Powder: 1 Tbsp Peanut Butter, and also use ½ Tbsp Milk instead
- Almond Milk: Regular milk
- Greek Yogurt: Coconut Yogurt
A Vegan Protein Peanut Butter Lava Cookie Recipe
This single serve peanut butter lava cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too.

Chocolate Peanut Butter Protein Cookie
Ingredients
- 3 Tbsp Oat Flour, 17g, see post for subs
- ½ scoop Vanilla Protein Powder, about 15g
- 1 Tbsp Unflavored Protein Powder, 5g
- 1½ Tbsp Peanut Butter Powder, 9g
- ¼ tsp Baking Powder
- 2 Tbsp Unsweetened Applesauce, 30g
- 2 Tbsp Non-fat Plain Greek Yogurt, 28g
- 1 Tbsp Unsweetened Almond Milk, 15ml
- ½ Tbsp Creamy Peanut Butter, 8g
Filling:
- ¾ oz Chocolate Piece, or Chopped Chocolate/ Chips, Sugar free recommended, 21g
- Chocolate Peanut Butter Cup Candy, chopped, sugar free recommended below
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Combine all the dry ingredients in a bowl – oat flour, vanilla protein powder, unflavored protein powder, peanut butter powder and baking powder.
- Add applesauce, Greek yogurt, almond milk, peanut butter and mix.
- Transfer ½ cookie mixture onto baking sheet, spread with spoon and shape.Place chopped chocolate in the middle, cover with remaining cookie mixture, and shape.Sprinkle on chopped peanut butter cup candy.
- Bake about 12-13 minutes – top should be cooked and dry to touch.
- Let cool for a few minutes and enjoy!
