- Whole Wheat Bread
- Vanilla Protein Powder – I used Quest Nutrition Vanilla Protein Powder for this recipe

Cinnamon Coffee Cake and Cinnamon Toffee Crunch would be great here.

This recipe for peanut butter french toast really is super easy to make for breakfast. Here’s what it takes:
- Make the egg mixture: Blend the egg, egg whites, milk, protein powder in a blender.
- Pour mixture into large wide bowl.
- Add peanut butter and whisk.
- Cut bread into strips – 4 each slice.
- Soak bread in egg mixture, gently flipping to soak each side. About 30 sec each side.
- Heat nonstick pan on medium, spray with oil spray.
- Place bread sticks on pan and cook 2-3 minutes, then flip and cook other side for another 2 minutes.

- Use a blender to make the batter to get rid of protein powder lumps or they’ll just stick on to the bread.
- Soak both sides of bread in egg mixture so the flavor absorbs well.
- Actually soak the bread for a bit so the flavor absorbs.
- Use medium-low heat so the high protein peanut butter french toast sticks don’t burn – this can happen quite easily with the protein powder.
- Be gentle when you flip.

Some alternate ingredients for Healthy PB French Toast
Regular or brioche bread slices work well instead of whole wheat.
This recipe uses Almond Milk, but use regular milk instead of almond milk if needed. Any other non-dairy milk also works.
Plant based protein powder instead of whey-casein works just as well.
If you have peanut allergies, use almond butter or cashew butter or any other nut butter instead.
For a low cab option: Use keto-friendly bread.

Peanut Butter Protein French Toast Sticks
Ingredients
- 2 slices Whole Wheat Bread, 56g
- 2 Tbsp Almond Milk, or other, 30ml
- 1 Egg
- 1 Egg White
- 2 Tbsp Vanilla Protein Powder, Whey-casein 11g
- 1 Tbsp Peanut Butter, Maple Syrup flavored PB recommended below, 14g
- Olive Oil Spray for greasing
Instructions
- Use a pizza cutter or serrated knife to cut each slice of bread into 4 strips each.
- In a blender, combine protein powder, milk, egg and egg white.Pour into wide shallow bowl or pot.
- Add peanut butter and whisk.
- Place bread in mixture and let soak for about 2-3 minutes. Flip, and soak other side for another 2 minutes.
- Heat a large non-stick skillet over medium-low and spray with cooking spray.
- Place soaked bread on pan and cook for 2-3 minutes, flip, and cook other side for another 2 minutes.Cook in batches if using a small skillet.
- Serve with powdered sugar, more Peanut Butter and berries or your choice of toppings.
