Jump to RecipeI actually saw a post on Instagram by @wellmadebykiley a long time ago and had this air fryer beignet concept on my recipe list. Always put it off because I thought it would be too much of a hassle. Turns out these are easier than ever!
Just mix the dough and air fry and you have the best high protein low fat version of beignets you could ask for!
Best part is it’s made with real clean ingredients – no sugar, very little butter and whole wheat pastry flour as well. Oh, and even better? It’s made in the air fryer instead of being deep fried!
Ingredients For Protein Beignets Recipe
This high protein beignet recipe has a few simple ingredients you probably have in your pantry already.
Here’s what you need:
- Whole Wheat Pastry Flour
- Vanilla Protein Powder – This is the replacement for sugar. I use the whey-casein blend from Quest Nutrition, since its great for baking.
- Non-Fat Greek Yogurt for extra protein
- Almond milk
- Cold Butter this has to be straight out of the fridge and cold
- Baking Powder
For the golden-brown look and powdered sugar vibe
- Melted Butter
- Zero Calorie Powdered Sugar. I used the one from Lakanto (use my code HAYLSKITCHEN) since it’s made with monkfruit and is sugar free.
Tips for the perfect Air Fryer Beignet Recipe
This air fryer beignet recipe is really easy to make, but here’s some pointers to get it right!
- Make sure to use cold butter for this air fryer beignet so that it creates those nice airy pockets in the middle when exposed to the high temperature.
- Make sure you have enough moisture from the milk and yogurt to prevent from being too dry.
- Don’t over-mix the dough or add too much flour – this will give you dry and tough beignets. It should take about 10 seconds.
- Brush tops with melted butter to get that golden brown look.
- Preheat air fryer so the beignets start cooking immediately and butter does not melt inside.
For a Baked Beignet Recipe
If you don’t have an air fryer, you can also make these protein powder beignets in the oven. Place beignets on a parchment lined baking sheet and bake the at 395°F for about 9-10 minutes.

How to store Air Fryer Biscuit Beignets
These homemade air fryer biscuit beignets keep really well at room temperature or in the fridge – but use an air tight container.
Store healthy beignets on countertop 2 days or 5 days in the fridge.
Alternatives for Healthy Beignets Recipe
- Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, with the same amount by weight, not cups.
- Greek Yogurt: Coconut yogurt
- Almond Milk: Any other milk
For Vegan Air Fryer Beignets
The original recipe here has no eggs and no milk, so these air fryer beignet recipe can be easily turned Vegan; Use Coconut yogurt instead of Greek yogurt, Plant-based protein powder and Vegan butter. Be sure to taste the dough a bit and see if it is sweet enough.

Protein Beignets – Easy Healthy Air Fryer Recipe
Ingredients
- ¾ cup Whole Wheat Pastry Flour, see post for sub, 90g
- ⅓ cup Vanilla Protein Powder, Whey-casein, 30g
- 1 tsp Baking Powder
- 1 Tbsp Cold Butter, Grated, 14g
- ¼ cup Unsweetened Almond Milk, 60ml
- ⅓ cup Non-fat Greek Yogurt, 75g
Top:
- 1 tsp Melted Butter, 5g
- 1 Tbsp Zero Calorie Powdered Sugar, 8g
Instructions
- In a bowl, combine flour, protein powder and baking powder.
- Add butter, yogurt and milk – little at a time – and mix with a spoon to until just combined. You should have a smooth dough.
- Lightly flour a work surface, transfer dough to surface and knead until smooth – about 10 seconds.DO NOT OVER-MIX or the protein powder will make the beignet tough.
- Flatten out and fold over itself. Repeat 2 times.Flatten out into rectangle 1-1½” thick.Cut into 7 pieces.
- Preheat air fryer to 375°F
- Brush tops of dough with melted butter.Place in air fryer butter-side-down.Brush other side with butter.(Place extra beignets in fridge if working in batches so butter in dough doesn’t melt)
- Air fry 4 minutes until golden-brown.Turn beignets over.Air fry another 2-3 minutes.
- Transfer to cooking rack and repeat with remaining dough.
- Dust with powdered sugar when still warm!
