I mean, come on. A rich chocolatey brownie with chocolate frosting and those candy coated chocolate chips, but still low sugar and low fat? AND you don’t have to share with anyone? Dessert doesn’t get more perfect!
Ingredients for Protein Cosmic Brownie for One Recipe
This single serving protein cosmic brownie is made with a few simple and healthy ingredients you probably have in your pantry.
- Chocolate Protein Powder for high protein brownie that’s also low sugar.
I used Quest Chocolate Milkshake flavor since its whey-casein and bakes well. - Unsweetened Cocoa Powder or Cacao Powder
- Coconut Flour
- An Egg White
- Unsweetened Almond Milk
- A bit of Vanilla Extract
- Baking Powder
And then for the frosting on this healthy cosmic brownie with sprinkles:

Tips to make Protein Powder Cosmic Brownie
This microwave cosmic brownie with protein powder is super easy to make, but here’s some pointers to get it perfect.
- Grease the dish so the microwave cosmic brownie comes out perfectly well.
- Use room temperature egg whites and milk;
This is so the wet ingredients and dry ingredients can mix well.
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, protein powder will make your single serving protein cosmic brownie tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
- Center of brownie will be slightly soft on top, but will cook while cooling.

Protein Cosmic Brownie for One – Actually the Best!
Ingredients
- ¼ cup Chocolate Protein Powder, Whey-casein, 22g
- 2 Tbsp Unsweetened Cocoa Powder, 10g
- 1 Tbsp Coconut Flour, 7g
- ¼ tsp Baking Powder
- 3½ Tbsp Unsweetened Almond Milk, 52ml
- 1½ Egg White, 45g
- ¼ tsp Vanilla Extract
Frosting:
- 2 tsp Non-fat Plain Greek Yogurt, 10g
- 1½ Tbsp Chocolate Protein Powder, Whey-casein, 8g
- 1 tsp Unsweetened Cocoa Powder, 1-2g
- 1 tsp Unsweetened Almond Milk, 5ml
- ½ Tbsp Candy Coated Chocolate Chips, 6g
Instructions
- In a bowl, chocolate protein powder, cocoa powder, coconut flour and baking powder.
- Add almond milk, egg white and vanilla, and mix.
- Grease a 1 cup crème brûlée dish or ramekin with cooking spray, transfer batter in, smoothen with a spatula or back of spoon.
- Microwave on high for 1 min 10 sec.
- Let cool for 1-2 minutes and place in freezer for another 1-2 mins.
Frosting:
- Invert cooled brownie onto plate (use small spatula to loosen slides if needed).
- In a bowl, mix yogurt, protein powder, cocoa powder and milk.
- Spread frosting on top of brownie and top with candy coated chips.
