Ingredients for Protein Dutch Baby Pancake
This high protein Dutch baby pancake uses a few simple and healthy ingredients like whole wheat pastry flour, almond milk and Greek yogurt, and is sweetened with protein powder instead of sugar.
- Whole wheat pastry flour for that lightness of the all-purpose flour, but with the nutritious benefits of whole grains
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly low carb high protein scone. Quest Nutrition again here.
- Vanilla Protein Powder to add some sweetness and make it a high protein German pancake. This is the replacement for sugar.

Quest is another option. - Greek Yogurt
- Unsweetened Almond Milk
- An Egg
- An Egg White
- A pinch of Nutmeg
And then for coating the pan:
- Softened Butter; Either salted or unsalted are okay.
Tips for Protein Powder Dutch Baby
This recipe for a giant German protein pancake is really easy to make, but here’s some pointers to get it right:
- Preheat the cast iron skillet before cooking; You need the pan to be hot!
- Use the butter! Don’t skip it. In fact, add more if you’re okay with it.
This is needed for the pancake to rise.
- Coat pan well with butter.
- Blend ingredients well; The batter should be quite runny.
- Use room temperature eggs, milk and yogurt;
This is so the wet ingredients and dry ingredients can mix well and form a smooth batter.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar protein powder dutch baby pancake.
Make ahead and store Healthy German Pancakes
These healthy german pancakes can be made ahead and stored in the fridge or freezer.
To store healthy Dutch baby pancake, place in airtight container in the fridge for 1-2 days.
For a longer-term option, cut it up into pieces, optionally wrap each one in plastic wrap and keep the Dutch baby in a freezer safe zipper bag. They should last 1-2 months.
Toppings for Healthy German Pancakes
This healthy German pancakes recipe makes a great breakfast, or even dessert or post workout treat!
My favorite toppings here were a generous sprinkle of sugar-free powdered sugar, nuts and berries.
A pour of maple syrup would really go well too, or even some chocolate sauce or chocolate chips.

Alternatives ingredients for Healthy Protein Powder German Pancakes
No cast iron skillet? Use a stainless steel skillet.
For some other alternative ingredients in this high protein healthy dutch baby pancake, try these:
- Whole Wheat Pastry Flour: All purpose flour or 1:1 gluten free baking flour in the same amount by weight not cups
- Unflavored Protein Powder: More Plain flour, but reduce the amount of yogurt to 1 Tbsp

High Protein Dutch Baby Pancake (with Protein Powder)
Ingredients
- ⅓ cup Whole Wheat Pastry Flour, 40g, See post for subs
- 2 Tbsp Unflavored Protein Powder, 11g, See post for subs
- 2 Tbsp Vanilla Protein Powder, 11g
- ⅔ cup Unsweetened Almond Milk, 160ml
- 2 Tbsp Non-fat Greek Yogurt, 28g
- 1 Egg, Room temperature
- 1 Egg White, Room temperature
- ⅛ tsp Nutmeg
For greasing:
- 2 tsp Softened Butter, or more, 11g
- Butter Spray, Optional
Instructions
- Preheat oven to 425°F.Place a 9” cast iron skillet in the oven for 10 minutes (important).
- Combine all ingredients in a blender: flour, unflavored protein powder, vanilla protein powder, almond milk, Greek yogurt, egg, egg white and nutmeg.Blend until smooth, about 15-20 seconds. Mixture should be pourable, add more milk if needed.
- When skillet is hot (use mitts), remove, spray with butter spray and add butter. Spread around evenly to melt and coat.
- Pour batter into greased pan/skillet.
- Bake for 15-17 minutes, or until golden-brown.
Notes
- If you don’t have a cast iron skillet, use stainless steel.
- Taste batter and add stevia sweetener if your protein powder is not sweet enough.
