And then most no fry fried ice cream recipes used a lot of butter to get the crunchy coating on.
Oh and how could I forget the part about all the sugar in the ice cream itself?
Well this protein fried ice cream was a life saver for sure; Used a crunchy coating made with corn flakes cereal and added sweetness in with the protein powder. Found a low sugar ice cream for the core and voila!
Ingredients for Protein Fried Ice Cream:
These protein fried ice cream balls are made with simple healthy ingredients for the coating and a low sugar ice cream, making them a great healthy dessert!
- A good Vanilla Ice Cream, or other plain flavored one. I used the Cake Batter flavor from RealGood Foods here.
- Cornflakes Cereal
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein. I recommend the Multi-purpose mix protein powder from Quest Nutrition.
- Vanilla Protein Powder for high protein fried ice cream coating, and also replace the sweetener.

How to make No Fry Fried Ice Cream with Cornflakes and Protein Powder
Other than just being a healthy, this is also one of the unique fried ice cream recipes because it is actually a no fry!
Here’s the basic steps (check out the tips below)
- Roll the ice cream into a ball
- Let it harden/freeze again
- Process all the ingredients for the eggless fried ice cream coating
- Roll the ice cream in the protein powder cornflakes mixture to make healthy no fry fried ice cream balls!
Tips for Homemade Fried Ice Cream Balls Recipe
- Work quickly when rolling the ice cream into balls to prevent it from melting too fast.
- Use pastic wrap to hold ice cream in shape in the freezer
- Process the cornflakes and protein powder coating for the eggless fried ice cream recipe small enough so it coats well, but still has a crunch.
- Use a double layer coating if you want an extra crunchy texture!
To store
Store homemade Mexican fried ice cream recipe in the freezer in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for a month.
Alternatives for Healthy Fried Ice Cream!
I made these sugar free and gluten free fried ice cream balls with this particular ingredient list, but here’s some healthy options to choose from.
- Cheerios: Other plain-tasting crunchy cereal like rice krispies or puffed rice or chex
- Unflavored protein powder: Almond flour or Oat flour
- Crunchy Almond Butter: Any other nut or seed butter; Peanut Butter, Cashew Butter or even Sunflower Seed Butter.

Protein Fried Ice Cream (but actually no fry)
Ingredients
- 1 pint Vanilla Ice Cream, 474g, recommendation below
Coating:
- ⅓ cup Corn Flakes Cereal, about 11g, see post for subs
- 2 Tbsp Unflavored Protein Powder, about 11g, see post for subs
- 1 Tbsp Vanilla Protein Powder, about 6g
- 2 tsp Crunchy Almond Butter, 11g
Instructions
Shape Ice Cream:
- Place sheets of plastic wrap on workstation.
- Scoop up about ½ cup worth ice cream (118g/¼ pint), roll into balls with hands
- Place balls on plastic wrap, wrap up, secure ball shape and twist end to seal.
- Place in freezer for about 5 minutes.
Coating:
- In a small food processor, combine corn flakes cereal, unflavored protein powder, vanilla protein powder and almond butter to form coarse crumbly mixture.
- Transfer to shallow bowl or plate.
- Take one ice cream ball at a time and roll in protein cornflakes mixture until completely covered.
- Top with chocolate sauce and enjoy!
