This really was a great way to get in some quick protein and clean carbs without all the extra sugar and fat in a regular pull apart bread. The classic would probably be a maple topping, but the chocolate lover in me had to go for chocolate sauce and some chocolate chips too.
Ingredients For Protein Pull Apart Bread
This protein pull apart bread recipe needs just 5 simple and healthy ingredients and have no yeast; Baking powder instead.
- Protein Pancake Mix – I used the Kodiak Cakes Protein Pancake Mix for these donuts – both in the Buttermilk and Dark Chocolate flavors.

You can also make these donuts with any other just add water pancake mix.
- Vanilla Protein Powder for extra high protein bread balls, and also replace the sweetener.

Tips for Protein Powder Pull Apart Pancake Bread
This protein powder pull apart bread really is an easy recipe, but here’s some pointers for the perfect protein bread balls:
- Use cold yogurt so that the dough does not get too sticky and hard to roll.
- Don’t over-mix the dough or it will get too warm and soft. Also, the protein powder can make the protein bread tough.
- Don’t let dough sit out for too long; Work quickly; You don’t want the dough to get warm and hard to handle.
- Use wet palms to roll the dough into balls so it doesn’t stick to your palms. The dough is actually very sticky.
Pancake Mix Pull Apart Bread
This protein pancake mix pull apart bread is a small batch recipe, but size up and it can keep really well at room temperature, in the fridge or freezer depending on whether or not you’ve added the glaze.
Pull apart pancake bread keeps on the countertop in an airtight container for 2 days.
Store the bites for one for up to 5 days in the fridge in an airtight container.
For a freezer friendly option, freeze the healthy pull apart bread on a baking sheet and then transfer to freezer safe zipper bag. It should keep up to 2 months.
When it’s time to eat, thaw to room temperature and warm them in the microwave for extra goodness.
Alternatives for Healthy Pull Apart Bread with Protein Powder
I made this healthy pull apart bread using protein powder and pancake mix for a low fat, sugar free and high protein recipe, but you can make a few swaps to make it work.
I haven’t tried them all though so you have to let me know if you do and how it turns out.
- Protein Pancake Mix: Use any regular pancake mix; You can make healthy protein bisquick pull apart bread too with this recipe.
A good base pancake recipe would work as well; I have a healthy whole wheat pancake recipe that could work just great here! Add some protein powder to make them high protein bread bites in place of the stevia (you might have to play around with the ratios here).
- Unflavored Protein Powder: Plain flour, but reduce the amount of yogurt (maybe by 2 Tbsp)
- Greek Yogurt: Coconut yogurt
Make Keto Pull Apart Bread
Use a keto friendly pancake mix in this recipe – make sure it’s one that’s a “just add water” pancake mix – and you have a high protein, low carb, keto pull apart bread recipe!
For a Vegan Option
The original recipe here has no eggs and no milk, so these protein pancake mix pull apart bread can be easily turned Vegan.
Replace the Greek Yogurt with Coconut Yogurt, and use a plant based protein powder and pancake mix. ProteinWorld has a Vegan protein blend and pancake mix that can work well here (HAYLSKITCHEN for a discount).

Protein Pull Apart Bread with Pancake Mix – Quick Hack!
Ingredients
- ⅔ cup Protein Pancake Mix, or any just-add-water pancake mix, 68g, see post for sub
- 3 Tbsp Vanilla Protein Powder, 16g
- 3 Tbsp Unflavored Protein Powder, 16g, see post for sub
- ¼ tsp Baking Powder
- ½ cup Non-fat Greek Yogurt, 112g
Instructions
- Preheat oven to 350°F and grease round 7” pan with.
- In a large bowl, combine protein pancake mix, vanilla protein powder, unflavored protein powder and baking powder.
- Add yogurt and mix until combined to form a shaggy dough ball; Stop as soon as ball forms.DO NOT OVER-MIX or the protein powder will make the bread balls tough.
- Wet your palms, divide dough into 12 pieces (1-2 Tbsp size) and roll into balls.Dough will be sticky.Place dough balls in pan, leave a little gap in between.
- Bake for 14 minutes until outside is slightly browned and looks cooked.
- Let cool a little, top with chocolate sauce, chips or maple syrup and enjoy.

I made these today and they turned out great! I sprayed 4 of them with I can’t believe it’s not butter and sprinkled them with Flavor god Gingerbread seasoning! Tomorrow I’m going to drizzle some yogurt mixed with Simply Delish vanilla pudding mix topped again with Gingerbread seasoning! I’m visualizing mini cinnamon bites!
