These protein shortbread cookies are made with simple healthy ingredients, have no sugar or butter or eggs, making them the perfect gluten free, dairy free and sugar free homemade healthy shortbread recipe!
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein shortbread. I recommend the Multi-purpose mix protein powder from Quest Nutrition.
- Vanilla Protein Powder for high protein shortbread cookie and also replace the sweetener.
I recommend Quest here again since it’s a whey-caesin blend. - Coconut Flour
- Tahini

To store high protein raw millionaire shortbread bars, place in an airtight container and keep on the counter for up to 3 days.
Keep these homemade whey protein shortbread cookies longer, refrigerate up to a 1 week or freeze.
To freeze, place shortbread protein bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!

- Coconut flour: Try using about 3 Tbsp of Almond Flour
- Tahini: Hazelnut Butter, Cashew Butter or Almond Butter
Vegan Shortbread Cookies without Butter or Eggs
Since there’s no butter or eggs in this recipe, these shortbread cookie protein bars can easily be made Vegan with the right ingredients.
