A rich, fudgy and insanely good Protein Skillet Brownie that’s actually healthy! Sweetened with protein powder and moistened with Greek yogurt, this protein brownie skillet is gluten free, has no sugar, no oil, no butter and no eggs either! A Vegan option too.
Jump to RecipeAfter the major success with that low calorie protein brownie I shared recently, I really wanted to share another version of it. There were a bit too many options for mix ins and such, and I just got overwhelmed with the complexity.
So went for the easiest option instead – bake that protein brownie batter in a skillet and call it a day.
Just being able to eat it out of the pan you bake it in makes the whole concept of a brownie skillet even more inviting don’t you think?
Ingredients for Protein Skillet Brownie
This rich and fudgy chocolate protein skillet brownie is made with a few healthy ingredients, and has no eggs, no oil, no sugar and is gluten free too;
- Chocolate Protein Powder needed for a high protein brownie and also replaces most of the ‘sugar’.
I used a whey-caesin blend protein powder from Quest Nutrition for this recipe.
Be sure to use a chocolate protein powder sweetened with stevia or monk fruit if you want a proper sugar free skillet brownie recipe. - Unsweetened Cocoa Powder, or Raw Cacao Powder (HAYLSKITCHEN.15OFF to save on Kiva Cacao)
- Gluten Free (All Purpose) Baking Flour – makes this a this a gluten free skillet brownie too!
- 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too)
- Non-fat Greek Yogurt contributes to the oil-free part of this protein brownie skillet since it adds the moisture, and also extra protein
- Almond Milk or regular milk
- Baking Soda
- Sugar free Chocolate-Nut Butter Spread/Nutella! I used the monk-fruit sweetened Nutella substitute – Suntella – from Lakanto for this brownie recipe since it’s sugar free (same code here too).
- Sugar free Chopped Chocolate or Chocolate Chips – I use sugar free ones from Lakanto here (HAYLSKITCHEN for a discount here as well). Lily’s is another sugar-free option!
How to make Protein Powder Brownie Skillet?
This recipe for chocolate protein brownie skillet is extremely easy to make; just mix and bake!
Here’s what it takes:
- Preheat your oven to 350°F and grease an 8” skillet – cast iron or any oven safe skillet.
- Whisk all the dry ingredients in bowl: chocolate protein powder, cocoa powder, gluten free baking flour, zero calorie sweetener and baking soda.
- Whisk the wet ingredients in a large bowl: Greek Yogurt and almond milk.
- Add the dry mix to the wet and gently fold to combine. Just be gentle and don’t over-mix the batter. The protein powder will make it too dense.
You should have a thick protein brownie batter. (Taste batter and add stevia powder if you want it sweeter)
- Add in chocolate nut butter spread + some chocolate chips and fold to combine.
- Transfer the no sugar protein brownie batter into pan, top with more chocolate chips and bake for about 25-30 minutes.
How to know when skillet brownie are ready?
Protein brownies are ready when the top is completely set and dry, and a tester (toothpick or thin sharp knife) comes out mostly dry.
For an extra fudgy brownie skillet, let some moisture be there on the tester – this should be at about 20 minutes.
Alternatives for Healthy Cast Iron Pan Protein Brownies:
For the perfect low fat but moist high protein cast iron brownies brownies made in a cast iron pan, I would highly suggest using the ingredients and brands I recommended; I do have some alternatives you can try. I haven’t testing them all, so I can’t say how your recipe might turn out.
- 1:1 Gluten Free Baking Flour: All purpose flour or Whole Wheat Pastry Flour
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Sugar-free Chocolate-Nut Butter Spread: Regular Nutella, or Chocolate Hazelnut Spread; Again not sugar free
Another option is to use Almond Butter or Hazelnut Butter, but the chocolate flavor won’t be as dark.
For a Vegan Protein Brownie in a Pan:
There’s already no eggs and no butter needed for this brownie, so to make a high protein Vegan skillet brownie, replace the Greek yogurt with coconut yogurt, and use dairy free chocolate chips.
I haven’t tested out a plant based protein powder for this recipe, but I know ProteinWorld has a Vegan protein blend that I would use in others, so that would be a good option to try here. (Code HAYLSKITCHEN gets you 30% off this).

How to store One Pan Protein Brownie Recipe?
This high protein no fat skillet brownie for two recipe is hard to resist, but it keeps well.
Let brownie cool completely in the skillet before storing.
Store chocolate protein powder brownie skillet at room temperature covered with plastic wrap (and sealed at the handle with a rubber band) for 1-2 days or in the fridge for a week.
You can also cut it into pieces and place it in an airtight container.
To freeze protein brownies made in a skillet, remove from pan, cut into pieces and individually wrap in plastic wrap. Place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.

Protein Skillet Brownie – Insanely Good and Healthy!
Ingredients
- ¼ cup Chocolate Protein Powder, 22g
- ¼ cup Unsweetened Cocoa Powder, or Cacao Powder, 20g
- 2 Tbsp + 2 tsp 1:1 Gluten Free Baking Flour, 25g, see post for subs
- 2 Tbsp Zero Calorie 1:1 Sugar Replacement, 24g
- ¼ tsp Baking Soda
- ½ cup Non-fat Greek Yogurt, 112g
- ¼ cup Unsweetened Almond Milk, 60ml
- 1½ Tbsp Sugar-free Chocolate Nut Butter Spread, 21g, see post for subs
- 1 Tbsp Chopped Chocolate or Chocolate Chips, 14g, Sugar-free recommended below
Instructions
- Preheat oven to 350°F and lightly grease an 8” cast iron or oven-safe skillet.
- In a bowl, whisk chocolate protein powder, unsweetened cocoa powder, gluten free flour, zero calorie sugar replacement and baking soda.
- In a large bowl, whisk together Greek yogurt and almond milk.
- Add dry mix to wet, and gently fold until combined. DO NOT OVER-MIX or protein powder will make the brownie dense.
- Add in chocolate nut butter spread and chocolate chips (reserving few for the top) and fold.
- Batter should be thick.
- Transfer batter into skillet, smoothen with a spatula or back of spoon and top with remaining chocolate chips.
- Bake for 22 minutes or until the top is set. Toothpick inserted into the center should come out mostly dry.
- Remove from oven and let cool completely.
- Cut into slices and enjoy!
Notes
- For extra gooey brownies, remove at 20 minutes when the tester comes out slightly moist.
