Homemade Protein Snickers Ice Cream bars made with Greek Yogurt and Protein Powder! With layers of peanut butter protein ice cream, sugar free peanut butter caramel, chopped peanuts and chocolate, it’s like eating a healthy protein snickers candy bar as ice cream!
Jump to RecipeSo I call these snickers protein ice cream bars, but since they’re made with Greek Yogurt, maybe they should be snickers frozen yogurt bars.
Either way, it’s the same concept with all that peanut and peanut butter and of course the chocolate.
I made a peanut butter frozen yogurt, and then a caramel (also made with peanut butter), real peanuts for the crunch, and then that melted chocolate coating.
It actually was like eating a frozen snickers candy!
Ingredients for Homemade Protein Snickers Ice Cream Bars
These homemade Snickers ice cream bars are made with healthy ingredients like Greek yogurt, protein powder and peanut butter – all sugar free, and are a much better alternative to the store bought frozen bars.
- Non-fat Plain Greek Yogurt or even any other fat amount
- Vanilla Protein Powder – the part that makes this a high protein ice cream bars recipe. All my protein treats are Quest protein powder recipes.
- Creamy Peanut Butter – Plain unsweetened and unsalted
- Chopped Peanuts; Unsalted again
- Maple Syrup – I would recommend a monk fruit sweetened one from Lakanto for a sugar free snickers ice cream recipe. Use the code HAYLSKITCHEN for a discount.
- Sugar free Chocolate Bar or Chocolate Chips to make this a snickers candy bar ice cream with no added sugar. I’d recommend Lakanto’s Chocolate (same discount here too) or Lily’s Bar or Chocolate Chips.
- Pure Vanilla Extract
- Some Water
- A bit of Coconut Oil
How to make No Churn Snickers Ice Cream Bar With Protein Powder
This Snickers ice cream bar recipe is really easy to make – a no churn and no ice cream maker recipe, but the challenge is in the wait. You need to wait for the frozen yogurt ice cream and then the peanut butter caramel to freeze before adding the chocolate.
First prep a 8” x 4”” loaf pan by lining it with parchment paper.
Make the Peanut Butter Protein Ice Cream with Greek Yogurt
- Combine the Greek Yogurt, Vanilla Protein Powder, Peanut Butter and Vanilla Extract in a boel.
- Spread the greek yogurt protein ice cream in the loaf pan, top with peanuts and freeze for 2 hours.
The Peanut Butter Caramel
- Stir the peanut butter, maple syrup, water and vanilla extract in a bowl to form a thick caramel.
- Pour caramel layer on frozen yogurt ice cream base and spread.
Freeze another 30 mins.
Slice it into bars – I do 5.
For the chocolate coating:
- Melt the chocolate chips or chopped chocolate and coconut oil in a shallow bowl in the microwave for about 1 minute – at 30 second intervals.
Let it cool down to room temperature so it doesn’t melt the ice cream. - Place a sliced snickers frozen bar in the melted chocolate, and move it around.
- Shake off excess chocolate and place the chocolate peanut butter ice cream bars on a parchment-lined baking sheet to harden. Put the sheet in the freezer to speed up the process even more!
Do this one bar at a time. You might need to reheat the chocolate every now and then so it remains melted.
How to store Homemade Snickers Ice Cream Candy Bar
Just like ice cream, you need to store these snickers frozen yogurt bars in the freezer or they turn runny.
They make great freezer friendly protein peanut butter ice cream bars too! Place the bars in an airtight sealed container, or individually wrapped in plastic wrap, and they should be good for 2-3 months.
Let the frozen snickers ice cream thaw for a bit so they’re easier to bite into.

- Spread evenly on frozen yogurt + peanuts. Place in freezer again for 30-45 minutes.
