Not only are these homemade snowball cookies super easy to make, but also healthy since they’ve got no butter or sugar either.
Actually such a pretty and perfect cookie for Christmas or any other special occasion.
Ingredients for Protein Snowball Cookies:
These protein snowball cookies are made with simple healthy ingredients you have in your pantry if you’re baking with protein power a lot.
- Oat Flour – You can make your own by blending rolled oats in a high speed blender. Makes these snowball cookies gluten free.
- Coconut Flour
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein Mexican wedding cookie recipe. I recommend the Multi-purpose mix protein powder from Quest Nutrition.
- Vanilla Protein Powder for high protein keto snowball cookie and also replace the sweetener.
I recommend Quest since it’s a whey-casein blend. - Coconut Flour
- Tahini
- Unsweetened Almond Milk
- Unsweetened Applesauce
- Chopped Pecans
And to coat these sugar-free snowball cookies:
- Sugar Free Powdered Sugar for coating.

Tips for Easy High-Protein Mexican Wedding Cookies
This high protein keto Mexican wedding cookies recipe is super easy, but heres’ some tips to get it perfect every time.
- Use whey-caesin protein powder since it works well with the ratio of ingredients here; Whey absorbs less moisture and won’t bake as well either.
- Taste the mixture and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the mixture and have sugar free and healthy snowball cookies.
- Don’t over-bake these or your mexican wedding cookies will turn out too dry and not melt-in-your-mouth soft.
- Roll the snowball cookies in powdered sugar while still warm so that the sugar sticks on the surface. If they get too cold, you won’t get a nice coating for the snowball effect.

To store high protein snowball cookies, place in an airtight container and keep on the counter for up to 3 days.

I made these healthy, sugar free, gluten free and low calorie snowball cookies without butter using this particular ingredient list, but here’s some options to choose from.
- Oat Flour: Almond Flour
- Unflavored protein powder: More oat flour, but reduce the amount of milk
- Coconut flour: Try using about 3 Tbsp of Almond Flour
- Unsweetened Almond Milk: Regular or dairy-based milk
- Unsweetened Applesauce: Mashed banana
- Tahini: Hazelnut Butter, Cashew Butter or other neutral nut or seed butter
Vegan Mexican wedding cookie recipe
Since there’s no butter in this recipe, you can make these healthy Mexican wedding snowball cookies Vegan using a plant-based protein powder. I haven’t tried this myself, so let me know if you do!

Anxious to try many of your recipes. They look fantastic. I’m 76 years old so have time to try these out. I have lost 85 pounds with 15 more to go on Optavia but will need to move off of their products when in maintenance. Been using the Quest protein powder, almond flower & greek yogurt to make bagels.

I am SO adding these to my healthy holiday baking bonanza! My sister used to make Mexican wedding cookies every Christmas (she used blitzed walnuts instead of pecans) but has recently discovered the dangers of sugar. Here’s a recipe request: peanut butter blossoms. They are delicious and addictive little peanut butter thumbprints capped with a Hershey’s kiss. Those little guys seem impossible to make without loads of butter or sugar! I’m sure you could work your magic with them and whip up a recipe that blows all of the unhealthy cookies out of the ballpark! I bet peanut butter powder would play a role?? Thanks anyway;)
