With the holiday season right now, a healthy lighter sticky date pudding really had to happen!
Is Sticky Toffee Pudding Healthy?
A regular sticky toffee pudding is not very healthy since it uses a lot of butter, sugar or even corn syrup in the pudding and sauce, but this one is not like it. With protein powder replacing the sugar and applesauce in place of most of the butter, this is a sugar free sticky toffee pudding. The only sugars here are the natural sugars from the dates.
Ingredients for Protein Sticky Toffee Pudding
This protein sticky toffee pudding is made with a healthy ingredients and has no added sugar; Just the natural sugar from the dates, with rest of the sweetness coming in from the protein powder.
- Dates
- Boiling Water
- Vanilla Protein Powder for healthy, protein sticky date pudding with no added sugar. I used Quest Nutrition Vanilla Milkshake whey-casein protein powder.
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein sticky toffee pudding. I used a whey-casein blend from Quest Nutrition.
- Whole Wheat Pastry Flour
- 1:1 Sugar Free Brown Sugar Replacement: I used Lakanto brown monk fruit sweetener so that the cinnamon sugar pop tart is sugar free (code HAYLSKITCHEN gets you a discount here too)
- Unsweetened Applesauce
- Melted Butter
- Egg
- Baking Powder and Baking Soda
For the High-Protein Sauce:
- Creamy Peanut Butter

Tips to make Sugar Free Sticky Date Pudding with Protein Powder
This sticky date pudding with protein powder really is a simple one and made in a mug or ramekin, but make sure you do all of this stuff to get is perfect.
- Grease the ramekin! You want the sticky toffee mug pudding to come off easily.
- Don’t over-mix the batter!
Make sure you gently stir the wet and dry to combine them.
If you over-mix it, protein powder will make your healthy sticky toffee pudding cake tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
- Add almond milk for sauce little at a time – too much can make the sauce too runny too soon.
To Store Protein Sticky Date Pudding
This protein sticky date pudding is great for a makeahead recipe and keeps in the fridge or on the countertop as well – without the sauce.
Let healthy sticky date pudding cool completely before storing. Keep in an airtight container on the countertop (without sauce) for up to 2 days. Make sauce when serving.
To freeze, place individual healthy stocky toffee pudding cakes in freezer safe zipper bags or containers, and freeze upto 2-3 months. Thaw before eating, then warm. Make sauce fresh when serving.
Alternates for this Healthy Sticky Toffee Pudding
I recommend making this low calorie, low sugar, healthy sticky toffee pudding with the protein powder and ingredients listed since it gives the best results.
If you need other options, here’s some alternatives for a healthy sticky date pudding cake for one:
- Whole Wheat Pastry Flour: Use All purpose flour or 1:1 Gluten Free Baking Flour (for a gluten free protein pumpkin bread), with the same amount by weight not cups.
- Unflavored Protein Powder: More flour, but also reduce the applesauce to about 1½ Tbsp.
- Sugar Free Brown Sugar: Coconut Sugar
Options for the Lighter Sticky Toffee Pudding Sauce:
- Peanut Butter: Almond Butter, Cashew Butter or Hazelnut Butter
- Peanut Butter Powder: 2 tsp Peanut Butter, but also reduce milk to 1½ Tbsp
- Almond Milk: Any other milk

Protein Sticky Toffee Pudding – Lighter, Sugar Free Recipe!
Ingredients
- 4 Pitted Dates, Medjool preferred, about 3.3oz
- ½ tsp Baking Soda
- ¾ cup Boiling Water, 180ml
Pudding:
- ⅓ cup Vanilla Protein Powder, Whey-casein, 30g
- ¼ cup Unsweetened Applesauce, 60g
- 1 tsp Melted Butter, 5g
- ½ Tbsp Zero Calorie Monkfruit Brown Sugar Substitute, or regular, 6g
- 1 Egg
- ½ cup Whole Wheat Pastry Flour, 60g
- ¼ cup Unflavored Protein Powder, Whey-casein, 22g
- 1 tsp Baking Powder
- ¼ tsp Baking Soda
- ⅛ tsp Salt
Sauce:
- 1 Tbsp Peanut Butter, 16g
- 1 Tbsp Peanut Butter Powder, 6g
- 1 Tbsp Vanilla Protein Powder, Whey-casein, 6g
- 2 Tbsp + 1 tsp Unsweetened Almond Milk
- ¼ tsp Vanilla Extract
Instructions
- Preheat oven to 350°F and lightly grease a 4 1 cup(8oz) ramekins.
Dates:
- Place dates and baking soda in a bowl. Pour boiling water over.
- Let stand for 20 minutes.
- Chop dates and mix back into water.
Batter:
- In a bowl, whisk applesauce and melted butter.Add vanilla protein powder and brown monkfruit sugar, and whisk again.Beat in egg, and then date mixture.
- In another bowl, mix flour, unflavored protein powder, baking powder, baking soda and salt.
- Add dry mix to wet and fold until combined.
- Divide batter among ramekins and smoothen top with back of spoon or spatula.
- Bake for 18-20 minutes. Tester inserted should come out clean.
Sauce:
- In a bowl, combine peanut butter, peanut butter powder, vanilla protein powder, milk and vanilla extract.
- Invert pudding onto plate.Poke holes on top of pudding using skewer, and pour sauce over.
