A loaded, low calorie Protein Sugar Cookie recipe filled with white chocolate chips! This protein powder sugar cookie is soft, sweet and actually healthy with applesauce and yogurt, but no butter or sugar!
Jump to RecipeSomeone asked me for a frosted protein sugar cookie recipe, but I really like this whole chocolate chip filled cookie concept; Maybe coz I just got some pretty unicorn white chocolate chips!
Funky chocolate chips over frosting is what I’d pick.
Definitely a good call here, since it’s like a frosting-stuffed vanilla protein cookie haha.
Ingredients for White Chocolate Stuffed Protein Sugar Cookie Recipe
This healthy protein sugar cookie recipe has just a few simple ingredients, and is eggless, has no butter or oil and no sugar either! A great vegan protein cookie recipe too.
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Vanilla Protein Powder for healthy, whey protein protein mug cake that’s also sugar free
I used Quest Nutrition Vanilla Milkshake protein powder here.
ProteinWorld Whey and ProteinWorld Slender Blend are also great options. Code HAYLSKITCHEN gets you a discount on both. - Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly low calorie protein cookie. Quest Nutrition whey-caesin again here.
- Unsweetened Applesauce for a soft sugar cookie without butter
- Non-fat Greek Yogurt contributes to the oil-free part of these protein cookies since it adds the moisture, and also extra protein
- Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
- Baking Powder
And then of course..
- White Chocolate Chips or Chopped Chocolate (or Chocolate Chips) for sugar cookies with a white chocolate add in.
I use the white chocolate chips from Lily’s here.
How to make a Single Serving Protein Powder Sugar Cookie
To make one of these healthy protein powder sugar cookies, you mix the protein cookie dough, spread it out, add in the chocolate filling and just bake!
- Preheat your oven to 350°F and line a baking pan with parchment paper.
- Mix your dry ingredients – oat flour, vanilla protein powder, unflavored protein powder and baking powder – in a bowl.
- Add in wet ingredients: applesauce, Greek yogurt and almond milk.
- Transfer ½ protein sugar cookie dough onto the baking sheet in a round cookie shape.
- Place chocolate chips in the middle to form the white chocolate center of the protein cookie.
- Cover with remaining protein cookie dough and shape it into a giant chocolate sugar protein cookie for one.
- Bake for 13-14 min. You might need a minute extra; make sure the top is completely dry to touch.
Let it cool a bit, and indulge!
Store Vanilla Protein Cookie
This vanilla protein cookie recipe is a giant single serve and is best had fresh.
If you want to store it, keep the low calorie sugar cookie in an airtight container and keep on the countertop for up to 2 days, or fridge 5 days.
To freeze healthy sugar cookie, place in freezer-safe zipper bag and keep 1-2 months; Don’t forget to thaw before eating!
Alternates for this Single Serve Healthy Sugar Cookie Recipe
I recommend making this healthy, low calorie sugar cookie using the protein powder and other ingredients and products listed – since it gives the best results.
If you need other options for the flours and such, here’s some alternatives:
- Oat flour: Use Whole wheat pastry flour or even all purpose flour. A 1:1 Gluten-free all purpose baking flour would work too. Go by the weight for these substitutions.
You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it. - Unflavored Protein Powder: More flour (also 1 Tbsp)
- Unsweetened Applesauce: Mashed Banana
- Almond Milk: Regular milk
- Greek Yogurt: Coconut Yogurt
A Vegan Protein Sugar Cookie Recipe
This single serve low lalorie sugar cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too.
For the perfect eggless Vegan vanilla protein cookie, make sure you use a plant based protein powder, coconut yogurt and dairy free chocolate.
ProteinWorld has a Vegan protein blend as well (HAYLSKITCHEN for the discount here too).

Made it twice in a day!Tastes amazing!:)
Oh wow! You really do love this protein sugar cookie more than I do! Love it!
Haven’t made it yet but very excited to try it. Does it matter if I just use more vanilla protein instead of unflavored?
Have yet to try, but why applesauce? Could I just use an egg instead? And I’m wondering about using the vanilla protein for all three tbsp’s too!
Hi Caitlyn!!
I use applesauce to add some moisture so the cookie doesnt turn out too dry.
Hii! The vanilla I used was very sweet, so if yours is sweet as well, your cookie might end up too sweet if you have too much of it.
I’d recommend extra flour instead of the unflavored protein 🙂
But also reduce the milk a little.
