Jump to RecipeI think I’ve had a box of toaster waffles lying in my freezer for about 6 months now, and really wanted to use them up in a recipe.
I looked up “things to do with toaster waffles” and “how to use leftover waffles” so many times, and finally just decided to go for something of my own – bread pudding aka casserole aka waffle bake.
This was definitely quite an upgrade to the regular waffle bread pudding or waffle casserole bake, since I didn’t use any sugar or maple syrup to sweeten the custard, but went for protein powder instead – just my thing.
Ingredients for Protein Waffle Bread Pudding
This protein waffle bread pudding recipe needs just leftover waffles and handful of clean ingredients; No sugar or cream here for a healthy waffle casserole. A great way to repurpose waffles for sure.
- Frozen Toaster Waffles; I used the protein toaster waffles from Kodiak Cakes, but any leftover waffles work for this recipe.
- Protein Powder for high protein waffle casserole, and also replace the sweetener.

Another option would be Quest. - Unsweetened Almond Milk or regular milk
- A bit of Greek Yogurt to replace the heavy cream and make a fat free bread pudding
- An Egg White
- Ground Cinnamon
How to make Protein Waffle Casserole with Toaster Waffles
This healthy waffle casserole recipe is really easy to make with toaster waffles or protein waffles or any leftover waffles, and truly perfect for a dessert for breakfast craving!
Prep!
Start with preheating your oven to at 350°F.
Chop the waffles into 1-1½” pieces.
Make the protein waffle casserole custard:
- Mix all the ingredients – protein powder, milk, Greek yogurt, egg white and cinnamon – a bowl.
Assemble the Single Serve Waffle Bread Pudding
- Grease 2 ramekins with coconut oil or cooking spray
- Place chopped waffle pieces cubes in
- Pour skinny bread pudding custard into the ramekins
- Press the waffles down and let it soak for about 5 mins
- Top with chocolate chips or chopped chocolate
And now Bake & Serve!
For the perfect single serve waffle bread pudding recipe, bake for 20 minutes at 350°F.
The custard should be set and top of waffles should be a bit crispy.
Let cool for about 5 minutes.
Alternatives for Healthy Protein Waffle Bake
Regular Waffle Bread Pudding with Frozen Waffles
Instead of toaster waffles, you can make this bread pudding with any crispy leftover waffles. Another option is to switch out the protein powder with an equal amount of other sweetener. I would recommend Lakanto 1:1 Zero Calorie Monkfruit sweetener to keep it sugar free.
This is a recipe with frozen waffles, but can be possibly be made with cooked and completely cooled waffles as well.
Vegan Protein Waffle Bread Pudding
For a vegan protein waffle casserole, replace the egg white with a flax egg (1 Tbsp flaxseed meal + 3 Tbsp water let rest 5 min) and Greek yogurt with coconut yogurt.
Make sure you use a plant based protein powder and dairy free chocolate chips. ProteinWorld has a Vegan protein blend as well.

Large Batch Waffle Casserole
I made this protein waffle casserole recipe as a two large single serves, but you can also use a casserole dish or baking pan for 4-5x the recipe. Keep an eye on the baking time though; it might take about 30 minutes.

Protein Waffle Bread Pudding with Toaster Waffles – Easy Hack!
Ingredients
- 3 Toaster Waffles, 114g, or 2 waffles
- 2 Tbsp Protein Powder, 15g
- ¼ cup Unsweetened Almond Milk, 60g
- ¼ cup Non-fat Greek Yogurt, 56g
- 1 Egg White
- ¼ tsp Cinnamon, Optional
Instructions
- Preheat oven to 350°F, and lightly grease a large two 1-1½ cup (8-10 oz) ramekin.
- Chop waffle into 1½”-2” pieces (using pizza cutter or sharp knife) and place in ramekins.
- In a bowl, whisk together protein powder, almond milk, Greek yogurt, egg white and cinnamon.
- Pour custard mixture evenly over waffle pieces; Press down and let rest 5 min to soak.
- Bake for 20 minutes until mixture is set; waffles should be slightly crisp on top.
- Let cool a few minutes, top with chocolate sauce or nut better and serve.
