Ingredients for Low Carb Pumpkin Protein Balls
These low carb pumpkin protein balls use coconut flour and a few more ingredients.
- Pumpkin Puree – be sure its the unsweetened one. Not pumpkin pie filling.
- Whey-Casein Vanilla Protein Powder; Quest Nutrition is the one I recommend.
- Unflavored Protein Powder I use the Whey-Casein from Quest Nutrition here.
- Coconut Flour to absorb the moisture and make a smooth protein ball recipe.
- Almond Butter
- Pumpkin Pie Spice
And for the topping:
- Zero Calorie Monkfruit Sweetener: Lakanto Golden is the one I use (code HAYLSKITCHEN for a discount)
- Sugar-Free Chocolate for topping; I use Lakanto (code HAYLSKITCHEN gives you a discount)
How to make Pumpkin Protein Balls without Oats:
These pumpkin protein balls without oats are really easy to make; Just mix everything in a bowl and shape into the pumpkins.
- Mix all ingredients (protein powders, coconut flour, pumpkin, pumpkin pie spice) so that you get an even mix.
Use whey-casein protein powder since it works well with the ratio of ingredients here; Whey absorbs less moisture, so you would have to reduce the amount of milk in this case.
Add more milk to mix if too dry, more coconut flour if too wet; Mixture should be handleable and rollable.
- Taste the batter and see if you need some extra sweetener.
Use sugar-free stevia sweetener so the nutrition label remains as is.
- Divide mix into 6 portions, and roll into balls.
- Place sweetener in a shallow bowl and roll protein balls in sweetener.
- Use toothpick to press down vertical lines like pumpkins.
Pierce chocolate piece on one side to make stub of pumpkin.
To store Keto Pumpkin Protein Bites
These keto pumpkin protein balls are best stored in the fridge.
