This cookie is definitely going to be the base for all my chewy protein cookies to come.
Ingredients for Chocolate Chip Pumpkin Protein Cookies
These chocolate chip pumpkin protein protein cookies need just a few healthy ingredients, no butter or oil and no sugar either! A great gluten free protein cookie cake too.
- Vanilla Protein Powder for healthy, sugar free pumpkin cookie
I used Quest Nutrition Vanilla whey-casein since it works best for baking. - Pure Pumpkin Puree – either from the can like libbys, or homemade. Make sure its not pumpkin pie filling though.
- Pumpkin Cheesecake flavored Peanut Butter Powder (peanut powder), or regular
I used Pumpkin Cheesecake Flavored PB Co peanut powder.
For a regular version I’d recommend Lakanto (code HAYLSKITCHEN gives you a discount) or PbFit or PB2 too. - Whole Wheat Pastry Flour

- Coconut Flour
- An Egg
- Almond Butter
- Baking Soda
And for the mix-ins:

Tips for Pumpkin Spice Protein Cookies
This pumpkin spice protein cookie recipe is super easy, but heres’ some tips to get it perfect every time.
- Use whey-caesin protein powder since it works well with the ratio of ingredients here; Whey absorbs less moisture, so you would have to reduce the amount of pumpkin puree in this case.
- Shape cookie mixture on pan – cookies will spread, but not very much
- Leave space between cookies, since they will spread.
- Use room temperature ingredients so they mix well.
Store Homemade Pumpkin Pie Cookies
These homemade pumpkin pie cookies can be stored on the countertop, in the fridge or even frozen.
Pumpkin protein powder cookies keep on the countertop for 1-2 days, and in the fridge for 5 days (in an airtight container).
To freeze healthy pumpkin chocolate chip cookie recipe, place in freezer-safe zipper bag with parchment paper between each once, and keep 1-2 months; Don’t forget to thaw before eating!

Pumpkin Protein Cookies – Low Fat, Sugar Free!
Ingredients
- ½ cup Vanilla Protein Powder, Whey-casein, about 45g
- ¼ cup Whole Wheat Pastry Flour, 30g
- ¼ cup Flavored Peanut Butter Powder, 24g, Recommendation below
- 1½ Tbsp Coconut Flour, 10g
- 1 Tbsp Zero Calorie Brown Sugar Substitute, 12g
- ¾ tsp Baking Soda
- ½ tsp Pumpkin Pie Spice
- ½ cup Pumpkin Puree, 120g, Not pumpkin pie filling
- 1 Egg
- ½ Tbsp Almond Butter, 8g
- 2 Tbsp Chocolate Chips, 28g, Sugar-free recommended below
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a bowl combine vanilla protein powder, peanut butter powder, flour, coconut four, sugar alternative, baking soda and pumpkin pie spice..
- In another bowl, place whisk pumpkin puree, egg and almond butter.
- Add dry mix into wet and gently fold until uniform.
- Add chocolate chips and mix again.
- Divide cookie mixture into 8 on baking sheet, and spread with spoon or spatula and shape into cookies (keep 1-2” space).
- Bake about 8 minutes – top should be cooked and dry to touch, but still soft.
- Transfer to cooling rack to cool completely.
