Now that I think about it, I think I’d rather eat this toaster pastry version of a red velvet cupcake instead of the actual thing. It’s a lot healthier, has no sugar, made with oat flour, and actually has nutritional value!
P. S. I always make my protein pop tarts in the air fryer, but there’s an option to bake this as well; I’ve got a note below.

- Oat Flour (you can make your own with rolled oats in a high speed blender)
- Chocolate Protein Powder for high protein pop tart, and also replace the sweetener.

Tips for Homemade Red Velvet Pop Tart with Protein Powder
This homemade red velvet pop tart is made in the air fryer and really is an easy toaster pastry recipe, but here’s some tips to make sure you get it right!
- Process the dry ingredients first (oat flour, protein powder, cocoa powder and peanut butter powder)
- Use cold yogurt so that the dough does not get too sticky and hard to roll.
- Don’t over-process the dough or it will get too warm and soft.
- Don’t let dough sit out for too long; Work quickly with rolling, adding the filling, rolling and cooking. Again, you don’t want the dough to get warm.
- If needed, flour the work surface and rolling pin to prevent dough from sticking
To make Baked Protein Pop Tart instead of using Air Fryer
Instead of an air fryer pop tart, make a baked chocolate toaster pastry; Place the pop tart pastry on a parchment lined baking sheet and bake at 425°F for 9 minutes.

Red Velvet Protein Pop Tarts – Healthy, Homemade, Sugar Free
Ingredients
- ¼ cup Oat Flour, 22g, see post for subs
- 1½ Tbsp Chocolate Protein Powder, 8g
- 1 Tbsp Peanut Butter Powder, 6g
- 2 tsp Unsweetened Cocoa Powder, 3-4g
- 3 Tbsp Non-fat Plain Greek Yogurt, Cold 42g
- ½ tsp Red Food Coloring (Liquid)
Filling:
- 2 Tbsp Non-fat Plain Greek Yogurt, 28g
- 1 Tbsp Vanilla Protein Powder, about 6g
Frosting:
- 1 Tbsp Non-fat Plain Greek Yogurt, 14g
- 1½ tsp Zero Calorie 1:1 Powdered Sugar Substitute, or regular, 3g
Instructions
- Process oat flour, protein powder, peanut butter powder and cocoa powder in food processor.Add Greek Yogurt and red food coloring and process to form dough ball – about 15 seconds; Stop as soon as ball forms.
- Roll dough ball and then into rectangle (about 10”x4”, ¼” thick); Use scrap pieces around edges to make proper shape if needed.Cut into 2 halves (5”x4” each).
Make filling:
- In a bowl, whisk Greek yogurt and vanilla protein powder.
Assemble and bake:
- Take one dough rectangle and spread filling in the middle (leave about ½” from the edge).
- Cover with other rectangle, and seal edges with fork.
- Place in air fryer basket and cook at 400°F for 7 minutes.(or bake 425°F for 8-9 minutes, flipping halfway)Let cool for a few minutes.
Frosting:
- Stir yogurt and sweetener in a bowl and spread on top of cooled pop tart.
- Sprinkle on dough crumbs if any.
