Either way, this baked oats recipe was really rich and indulgent, and quite filling too with all the protein, fiber and healthy fats in there.

Rocky Road Protein Baked Oats are made with simple ingredients packed with protein and fiber from the oats, and sure to keep you feeling full until lunchtime.
- Instant or Quick Oats; Gluten free if needed.
- Chocolate Protein Powder as the sweetener, and also makes it a protein rocky road oatmeal recipe. I use Quest chocolate protein powder for this recipe.
- Unsweetened Cocoa Powder
- Unsweetened Almond Milk
- Non Fat Greek Yogurt for even more high protein oatmeal
- Vanilla Extract
- Baking Powder
And the Mix-Ins:
- Mini Marshmallows
- Chopped Almonds
How to make Rocky Road Baked Oatmeal with Protein Powder
This rocky road baked oatmeal recipe with protein powder is super easy to make and only needs a blender and ramekin.
- Preheat your oven to 350°F.
Grease a ramekin or oven-safe dish with coconut oil or cooking spray. You want one that’s about 1 cups or 8 ounces in volume. - Blend ingredients(except mix-ins) in a blender (oats, chocolate protein powder, cocoa powder, milk, yogurt, vanilla extract and baking powder) in a blender about 15 seconds until smooth.
- Pour ⅔ mixture into the ramekin.
Add half the mini marshmallows in the center.
Pour remaining mixture and cover well. - Add more mini marshmallows and almonds on top.
- Bake 25 minutes. The top of the oats will look wet, but they’re cooked.
Can you store Rocky Road Protein Baked Oatmeal?
Rocky Road Protein Baked Oats are easy to make and can be prepared in advance for a quick and easy breakfast on the go.
Place chocolate marshmallow baked oats it in an airtight container store in the fridge for 3-4 days or freezer for 2-3 months.
To reheat, microwave rocky road oatmeal from the fridge until warmed; Thaw the frozen oats first (use use the defrost setting on the microwave) before microwaving.
You can also reheat freezer friendly rocky road oats in a 350°F oven.

- ½ cup Rolled Oats, 45g
- ¼ cup Chocolate Protein Powder, 22g
- 1½ Tbsp Unsweetened Cocoa Powder, 8g
- 10 Tbsp Unsweetened Almond Milk, 150ml
- ¼ cup Non-fat Plain Greek Yogurt, 56g
- ½ tsp Vanilla Extract
- ½ tsp Baking Powder
Mix-ins:
- 2 Tbsp Mini Marshmallows, 5g
- 1 tsp Chopped Almonds, 5g
Instructions
- Preheat the oven to 350°F and lightly grease a ramekin or oven-safe dish (cooking spray or oil)
- Combine all ingredients (except mix-ins) in a blender – oats, protein powder, cocoa powder, milk, yogurt, vanilla extract and baking powder.
- Blend until smooth – about 15 seconds.
- Pour ⅔ mixture into the ramekin/dish.Add half mini marshmallows.Cover with remaining mixture.
- Top with almonds and remaining marshmallows.
- Bake for about 25 minutes.
