Jump to RecipeI actually got the inspiration for these Samoa cookie bites from a post on Instagram. They were just too easy to say no to – literally took like 10 minutes to throw together. And that’s including the coconut-toasting time.
Best part, you feel like you’re eating a Samoa Cookie but with these macros and clean ingredients you can definitely go for even a 3rd one! It’s even got a Samoa-flavored cashew butter in there!
Ingredients for Samoa Protein Balls
These healthy samoa cookie protein balls are made with simple ingredients like oat flour, protein powder and coconut flour, and are great for a healthy, sugar-free snack. Here’s all that goes in:
- Whey-Casein Vanilla Protein Powder to add sweetness to these no sugar protein truffles. I used whey-casein Vanilla flavor from Quest Nutrition
- Oat Flour
- Unflavored Protein Powder; I use the Multi-purpose mix protein powder from Quest Nutrition.
- Samoa flavored Cashew Butter; from American Dream Nut Butter (Some Mo’ Cashew Butter). It’s lower fat and higher protein than normal, and just amazing (code HAYLSKITCHEN gives you a discount on these).
ADNB has other amazing flavors that would work well here too. - Almond Butter Powder, also known as Powdered Almond Butter. I use the one from PB2.
- Coconut Flour
- Unsweetened Almond Milk
And for rolling:
- Unsweetened Shredded Coconut
- Sugar Free Chocolate: I used the one from Lakanto here.

How to make Samoa Cookie Bites with Protein Powder
These samoa cookie bites are made with protein powder for sweetness, and actually super easy – with no baking needed. Here’s some pointers to get it right.
- Mix all dry ingredients first (oat flour, protein powders, coconut flour, almond butter powder) so that you get an even mix.
Use whey-casein protein powder since it works well with the ratio of ingredients here; Whey absorbs less moisture, so you would have to reduce the amount of milk in this case.
- Add cashew butter and then milk little at a time; Even a little extra could make the mix too runny.
Add more milk to mix if too dry, more coconut flour if too wet; Mixture should be handleable and rollable.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the mixture and have sugar free no bake Samoa cookie truffle recipe.
- Broil coconut and keep checking when broiling since it can burn easily.
- Roll the samoa protein balls in shredded coconut when coconut is still warm so that it sticks.
To store No Bake Samoa Protein Bites
These Samoa protein bites are best stored in the fridge since they do have a bit of milk in there.
To store Samoa cookie energy balls, keep in an airtight container in the fridge for up to 1 week or freezer for 2-3 months. Let them thaw on the counter before eating!
Alternate ingredients for Healthy Samoa Cookie Energy Balls
I made sugar free, gluten free and healthy Samoa cookie energy balls with ingredients above, but here’s some other clean ingredients you can try.
- Oat flour: Almond flour
- Coconut Flour: Try 3x the amount of almond flour (I haven’t given this a try yet, but it should work)
- Almond Butter Powder: Use Peanut Butter Powder, or almond flour
- Samoa-flavored Cashew Butter: Regular cashew butter, almond butter or even tahini
- Almond Milk: Regular milk or other non dairy milk

Samoa Protein Balls – Healthy, Easy, Sugar-free
Ingredients
- ⅓ cup Oat Flour, 30g
- ½ scoop Vanilla Protein Powder, Whey-casein, 15g
- 2 Tbsp Unflavored Protein Powder, Whey-casein, 11g (or more oat flour)
- 2 Tbsp Coconut Flour, 14g
- 2 Tbsp Almond Butter Powder, 13g
- 1 Tbsp Samoa Cookie-flavor Cashew Butter, 14g, Recommendation below
- 3½ Tbsp Unsweetened Almond Milk, 52ml
Coating:
- 1 Tbsp Unsweetened Shredded Coconut, 5g
- 1 Tbsp Chopped Chocolate, Sugar-free recommended below, 7g
- Few drops Coconut Oil
Instructions
- In a bowl, mix oat flour, vanilla protein powder, unflavored protein powder, coconut flour and almond butter powder.
- Add cashew butter and almond milk (little at a time) and mix.Add more milk if the mix is too dry or coconut flour if the mix is too wet.
- Divide into 8 portions.Roll into balls.
Coating:
- Spread shredded coconut on a baking sheet and broil for about 3-4 minutes until lightly browned and toasted.Roll balls in coconut and set aside.
- Place the chopped chocolate and coconut oil in a bowl and microwave for about 20-30 seconds – at 15 second intervals – until it’s completely melted.Drizzle on balls.
