Quite the perfect indulgent dessert here – warm chocolatey protein brownie topped with cool and creamy ice cream. And it’s all for one so you don’t need to share!
Ingredients for Single Serving Protein Brownie Recipe
This healthy single serve protein brownie has just a few simple ingredients, is eggless, has no butter or oil and no sugar sugar either!
- 1:1 Gluten Free Baking Flour
- Chocolate Protein Powder for high protein cookie that’s also sugar free.

A third alternative would be Quest. - Unsweetened Cocoa Powder or Cacao Powder
- Peanut Butter
- Non-fat Greek Yogurt contributes to the oil-free part of this chocolate protein brownie since it adds the moisture, and also extra protein
- Almond Milk to make this fudgy brownie for one dairy free
- A bit of Vanilla Extract
- Baking Powder

How to make a Single Serving Protein Brownie for One
While most protein brownie for one recipes use the microwave, this single serve protein dessert is baked in the oven. A super easy process here though.
- Preheat your oven to 350°F and lightly grease a ramekin.
- Mix your ingredients – oat flour, protein powder, cocoa powder, peanut butter powder, almond milk, Greek yogurt and baking powder – in a bowl.
- Add in most of the chocolate chips or chunks, leaving some for the topping later.
- Transfer high protein brownie batter onto the ramekin.
Sprinkle on more chocolate chips.
- Bake the oven brownie for one for 13-15 min. You might need a minute extra; make sure a toothpick inserted in the center comes up mostly dry.
Let it cool a bit, and indulge!
Alternates for this Protein Brownie for One
I recommend making this single protein powder brownie using the ingredients and products listed – especially the since it gives the best results.
If you need other options for the flours and such, here’s some alternatives for a healthy brownie for one:
- Gluten Free Flour: Use Oat flour, Whole wheat pastry flour or even all purpose flour.
You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it. - Vanilla Protein Powder in place of chocolate
- Regular non-dairy milk to replace almond milk
- Coconut Yogurt in place of Greek Yogurt
A Vegan Protein Brownie Recipe
This baked single serve chocolate protein brownie recipe has no eggs and uses almond milk, so can easily be made Vegan too.
For the perfect eggless Vegan protein brownie, make sure you use a plant based protein powder, coconut yogurt and dairy free chocolate chips.

Mix-ins for Single Protein Brownie
This single serve protein dessert recipe makes a has the rich chocolate flavor, so I went for chocolate chips in the brownie batter.
For some more optins, you can mix in some chopped nuts – walnuts, almonds, pistachios – or may be even some seeds – cashew or pumpkin are good options.
Dried fruit like cranberries or raisins would work quite well in this high protein brownie for one.

Single Serve Protein Brownie
Ingredients
- 22 g 1:1 Gluten Free Baking Flour, see post for subs
- 2 Tbsp Chocolate Protein Powder, about 11g
- 1 Tbsp Unsweetened Cocoa Powder, or Cacao Powder, 5g
- ¼ Baking Powder
- 3 Tbsp Unsweetened Almond Milk
- 2 Tbsp Non-fat Plain Greek Yogurt, 28g
- 2 tsp Peanut Butter, 11g
- ¼ tsp Vanilla Extract
- 2 tsp Chopped Chocolate or Chocolate Chips, Sugar free recommended
Instructions
- Preheat oven to 350°F and grease a 1 cup ramekin with cooking spray.
- In a bowl, whisk flour, chocolate protein powder, cocoa powder and baking powder.
- In a large bowl, whisk together almond milk, Greek yogurt, peanut butter and vanilla.
- Add dry mix to wet, and gently fold until combined. Batter should be slightly thick.Fold in half the chocolate chips.
- Transfer batter into ramekin, smoothen with a spatula or back of spoon and top with chocolate chips.
- Bake for 13-15 minutes.Top should be set and toothpick inserted into the center should come out mostly dry.
- Let cool for a few minutes and enjoy!
