I just really wanted to make one of those big single serve cookies again (like that microwave one I made a while ago) but this time decided to bake it.
The plan was to test the recipe and then shoot it another day in the week, but then this big chocolate protein cookie actually turned out so soft and pretty and perfect, I just went with the shoot.
Good choice too because I didn’t have another post that would fit into my Instagram feed for the day, haha.
Ingredients for Single Serving Chocolate Protein Cookie Recipe
This healthy protein cookie recipe has just a few simple ingredients, and is eggless, has no butter or oil and no sugar sugar either! A great vegan protein cookie recipe.
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Chocolate Protein Powder for high protein cookie that’s also sugar free.

A third alternative would be Quest. - Unsweetened Cocoa Powder or Cacao Powder
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Non-fat Greek Yogurt contributes to the oil-free part of these chocolate protein cookies since it adds the moisture, and also extra protein
- Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
- Baking Powder
And then of course.. Chopped Chocolate or Chocolate Chips! I’d recommend the sugar free ones from Lakanto.

How do you make a Single Serve Double Chocolate Protein Powder Cookie
To make one of these giant chocolate protein cookies, you mix the protein cookie dough, spread it out and just bake!
- Preheat your oven to 350°F and line a baking pan with parchment paper.
- Mix your ingredients – oat flour, protein powder, cocoa powder, peanut butter powder, almond milk, Greek yogurt and baking powder – in a bowl.
- Add in most of the chocolate chips or chunks, leaving some for the topping later.
- Transfer protein cookie dough onto the baking sheet and shape it into a big giant chocolate protein cookie for one.
Sprinkle on more chocolate chips.
- Bake for 11 min. You might need a minute extra; make sure the top is dry to touch.
Let it cool a bit, and indulge!
Alternates for this Giant Protein Cookie for One
I recommend making this giant protein powder cookie using the ingredients and products listed – especially the since it gives the best results.
If you need other options for the flours and such, here’s some alternatives:
- Oat flour: Use Whole wheat pastry flour or even all purpose flour. A 1:1 Gluten-free all purpose baking flour would work too.
You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it.
- Peanut Butter Powder: Use real peanut butter, but reduce almond milk to 2 tbsp
- Vanilla Protein Powder in place of chocolate.
- Regular non-dairy milk to replace almond milk.
- Coconut Yogurt in place of Greek Yogurt
A Vegan Protein Cookie Recipe
This single serve chocolate protein cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too.
For the perfect eggless Vegan protein cookie, make sure you use a plant based protein powder, coconut yogurt and dairy free chocolate chips.

Mix-ins for Single Serve Protein Cookie
This single serve protein dessert recipe makes a giant chocolate cookie, so I went for chocolate chips in the cookie batter.
For some more options, you can mix in some chopped nuts – walnuts, almonds, pistachios – or may be even some seeds – cashew or pumpkin are good options.
Dried fruit like cranberries or raisins would work quite well in this high protein cookie.

Ingredients
- ¼ cup Oat Flour, 22g, see post for subs
- 2 Tbsp Chocolate Protein Powder, about 11g
- 1 Tbsp Unsweetened Cocoa Powder, or Cacao Powder, 5g
- 1 Tbsp Peanut Butter Powder, 6g
- ¼ + ⅛ tsp Baking Powder
- 3 Tbsp Unsweetened Almond Milk
- 2 Tbsp Non-fat Plain Greek Yogurt, 28g
- 2 tsp Chopped Chocolate or Chocolate Chips, Sugar free recommended
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Combine all the ingredients except the chocolate chips in a bowl – oat flour, chocolate protein powder, cocoa powder, peanut butter powder, almond milk, greek yogurt and baking powder.
- Fold in chopped chocolate or chocolate chips, reserving a few.
- Transfer cookie mixture onto baking sheet, spread with spoon and shape.
- Sprinkle on remaining chocolate chips,
- Bake about 11 minutes – top should be dry to touch.
- Let cool for a few minutes and enjoy!

Hi Addie! You can use coconut yogurt instead or even Applesauce or Mashed Banana!
I should’ve thrown it away as soon as I say the consistency of the batter it was incredibly wet and did not have an appealing taste. I went ahead and baked it, it turned out however it did not taste good in the least and was truly lacking flavour, sorry to be so blunt but don’t make this.
Sorry it didn’t turn out the way you wanted. Just to confirm did you use the same brand of products I recommended? I know some protein powders don’t taste the same as the one I used.
