Jump to RecipeI’ve really gotten into the whole single serve protein cookie thing recently, and even more so because so many people were interested in the last one I made; A single serving chocolate protein cookie.
I’d actually had my eye on some sugar-free marshmallows for quite a while – even reached out to a brand to ask if I count try some – but nothing worked out.
I just gave in with the regular ones because it would also start to get me to eat a little less restrictive.
So of course the first thing I had to make with marshmallows had to be a s’mores inspired recipe and what better than a giant single serve s’mores protein cookie?!
Ingredients for Single Serving S’mores Protein Cookie Recipe
This healthy s’mores protein cookie recipe has just a few simple ingredients, and is eggless, has no butter or oil and no sugar sugar either!
- Gluten Free Baking Flour – or regular or whole wheat pastry flour
- Vanilla Protein Powder for high protein cookie recipe, and also replace the sweetener.
I use Quest Vanilla. - Unflavored Protein Powder I use the Multipurpose mix from Quest Nutrition.
- Unsweetened Applesauce
- Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
- Baking Powder
And then of course.. Hershey’s Chocolate and Mini Marshmallows.
How to make a Single Serve Smores Protein Cookie
To make one of these smores protein powder cookies, you mix the protein cookie dough, spread it out and just bake!
- Preheat oven to 350°F and line a baking pan with parchment paper.
- Mix cookie ingredients – flour, vanilla protein powder, unflavored protein powder, applesauce, almond milk and baking powder – in a bowl.
Add almond milk a little at a time so mix doesn’t get too runny.
- Transfer half cookie dough onto the baking sheet and shape it into a big giant chocolate protein cookie for one.
- Place most chocolate and marshmallow in middle.
- Cover with remaining cookie dough.
Use wet fingers to shape into cookie. - Place baking pan in freezer for about 1 hour.
- Bake for 7 minutes, then Broil 1 min.
You might need a minute extra; make sure the top is dry to touch, and marshmallows slightly toasted.
Don’t over-bake the cookie; Let cook until the top is just cooked and soft; too long and you might end up with a rough and dry texture.
Alternates for this Healthy S’mores Protein Cookie Recipe
I recommend making this healthy s’mores inspired giant protein powder cookie using the ingredients and products listed – especially the since it gives the best results.
If you need other options for the flours and such, here’s some alternatives:
- Gluten Free Flour: Use Whole wheat pastry flour or even all purpose flour.
You can also try oat flour. - Unflavored Protein Powder – 1½ Tbsp flour, but also use only 1 Tbsp applesauce.
- Regular non-dairy milk to replace almond milk.
- Applesauce: Pumpkin puree or mashed banana.
A Vegan Smores Protein Cookie Recipe
This single serve marshmallow protein cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too with the right alternatives.

- ¼ cup Oat Flour, 22g, see post for subs
- 1½ Tbsp Vanilla Protein Powder, about 8g
- 1 scoop Unflavored Collagen, 10g, see post for subs
- ½ Tbsp Coconut Flour, 3-4g
- ¼ tsp Baking Powder
- ½ Tbsp Creamy Peanut Butter, 8g
- 1½ Tbsp Unsweetened Almond Milk
- 1 Tbsp Non-fat Plain Greek Yogurt, 14g
- ⅓ oz or 2 tsp Chopped Chocolate or Chocolate Chips, Sugar free recommended, about 9g
- Mini Marshmallows, about 2 tsp, 5g
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Combine all the ingredients except the chocolate and marshmallow in a bowl – oat flour, protein powder, unflavored collagen, coconut flour, baking powder, peanut butter, almond milk and greek yogurt.
- Transfer cookie mixture onto baking sheet, spread with spoon and shape.Place chocolate pieces and marshmallows on top.
- Bake about 11 minutes – top should be dry to touch and marshmallows toasted.
- Let cool for a few minutes and enjoy!
