Homemade S’mores Protein Bars with graham crackers and toasted marshmallows too! These marshmallow protein bars use protein powder instead of sugar and are an easy s’mores inspired protein dessert.
Jump to RecipeFun fact! I actually did the shoot for these homemade protein bars at 8pm! I really needed something for my breakfast treat the next morning, and it was getting pretty late.
I really was hoping the lighting would be good enough to get the toasted marshmallows in these protein bars to show up. Thankfully they did, and did well! I was so proud!
Ingredients for S’mores Protein Bars
These S’mores protein bars are made with clean and healthy ingredients like oat flour and protein powder, but also have graham crackers and marshmallow as you’d want in a S’mores bar!
Here’s all you need:
The Graham Cracker Protein Bar Base:
- Plain or Honey Graham Crackers or Biscuits for the slight crunch (use gluten free if you need)
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Vanilla Protein Powder for high protein s’mores bar, and also replace some of the sweetener.
I used Quest vanilla. - S’mores flavor Cashew Butter – I recommend the one from American Dream Nut Butter (discount code HAYLSKITCHEN) – it’s low carb, low sugar, high protein and delicious!
- Sugar free Maple Syrup – Lakanto is the one I recommend! (code HAYLSKITCHEN will give you a discount)
The Chocolate Protein Bar Layer
- Chocolate Protein Powder: I use the one from Quest!
- Unsweetened Cocoa Powder
- More S’mores flavor Cashew Butter – The one from American Dream Nut Butter (disocunt code HAYLSKITCHEN)

Tips for perfect Smores Protein Bars
This Smores protein bar recipe is really easy to make; Just mix and go, but here’s some tips to get it right.
- Use fine oat flour not oats. You won’t get a smooth protein bar in this case.
- Add liquid (maple syrup and water) only a little at a time or the mixture will be too runny.
- Mix the ingredients well before pressing down layers so you have a smooth texture
- Press down firm and even; You want the bars to hold well.
- Broil the marshmallows, don’t bake! They will get too soft.
Also keep an eye on the broiling so they don’t burn.
To store Marshmallow Protein Bars
To store homemade marshmallow protein bars, let baked protein bars cool, then place in a sealed airtight container. Store on counter for 1 day or the fridge for 3-4 days.
To freeze, place healthy marshmallow bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!
Alternatives for Healthy S’mores Bars with Protein Powder
I made these high protein sugar free s’mores bars with the ingredient list above, but here’s some options to choose from.
- Oat Flour: Use Almond Flour; The same amount in cups
- Chocolate Protein Powder: Use a Vanilla (the flavor might be less dark here)
- Graham Crackers: Any cracker, or biscuit
- Sugar-free Maple Syrup: Use regular maple syrup!
- S’mores Cashew Butter: Just plain cashew butter, almond butter or even tahini work here. I would not recommend peanut butter due to the strong flavor.
Vegan S’mores Protein Bar Recipe
Since there’s no milk, these S’mores inspired protein bars can easily be made Vegan with the right ingredients.
Use a plant based protein powder and Vegan marshmallows for this recipe to get a healthy Vegan S’mores bar.

S’mores Protein Bars – Marshmallow and Graham Magic!
Ingredients
Graham Cracker Layer:
- 3 sheets Graham Crackers, Crushed, 45g
- 2 Tbsp Oat Flour, 11g, see post for sub
- 2 Tbsp Vanilla Protein Powder, Whey-casein, 11g
- 2 Tbsp S’mores flavor Cashew Butter, 28g, Recommendation below
- 1½ Sugar-free Maple Syrup, 22ml
Chocolate Layer:
- ½ cup Chocolate Protein Powder, 45g
- 3 Tbsp Unsweetened Cocoa Powder, 15g
- 2 Tbsp S’mores flavor Cashew Butter, 28g, Recommendation below
- 3 Tbsp Water, 45ml
Marshmallow Topping:
- ¼ cup Mini Marshmallows, 11g
Instructions
- Line a loaf pan with parchment paper; leave an overhang to lift out later.
- In a bowl or food processor, combine Graham crackers, vanilla protein powder, oat flour, cashew butter and syrup – little at a time – to form cookie dough-like consistency.Transfer to loaf pan and press evenly with spoon/spatula.
- In same bowl, combine chocolate protein powder, cocoa powder, cashew butter, and water (add little at a time).Spread over graham cracker layer and press down.
- Sprinkle on mini marshmallows, press down.
- Broil in the oven for 3 minutes until marshmallows lightly brown on top.
- Cool then slice into 8 bars.
