It’s got all the goodness you want from the classic cinnamon flavored cookie and also has an added crunch with the cinnamon toast cereal.
Ingredients for Snickerdoodle Protein Cookie Dough for One
A few simple and healthy ingredients here for this high protein edible snickerdoodle cookie dough without sugar; All pantry staples if you’re eating clean and healthy on the regular.
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Vanilla Protein Powder for high protein cookie dough, and also replace some of the sweetener.

- A bit of Coconut Flour
- 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too)
- A bit of Cashew Butter
- Unsweetened Almond Milk or another non dairy or regular milk
And optionally for some extra crunch:
- Cinnamon Toast Crunch Cereal 🙂
If your protein powder is not sweet enough, you might need some more ‘sugar’, or use stevia sweetener instead.
How to make Edible Snickerdoodle Protein Cookie Dough
This high protein snickerdoodle edible cookie dough is super easy to make with just a bowl and a fork or spoon.
- Combine everything except the optional cereal: oat flour, protein powder, unflavored collagen powder, coconut flour, zero calorie sweetener, cinnamon, cashew butter and almond milk (a little at a time) in a bowl.
- Mix to form snickerdoodle cookie dough texture.
- Add in the optional cinnamon toast crunch cereal, mix lightly, and eat out of the bowl.
To store Cinnamon Protein Powder Cookie Dough
This edible cinnamon cookie dough for one is perfect for when you want a quick single serving dessert, but you can store any extras if you have them.
Store extra edible snickerdoodle cookie dough for one in the fridge for 3-5 days or freezer for 3 months; Use an airtight container.
To serve frozen protein cookie dough, thaw overnight in the fridge, and add more milk if too hard.
Alternative ingredients for Healthy Snickerdoodle Cookie Dough:
I make this snickerdoodle protein powder cookie dough extra healthy with the ingredients above, but here’s some other healthy alternatives to try!
- Oat flour: Use heat-treated gluten free flour or whole wheat pastry flour (there’s plenty of videos online on how to do this)
Just make sure you’re not eating raw flour - Protein Powder: You can also trying replacing this with more regular 0 calorie sweetener.
- Unflavored Collagen: Almond flour or more oat flour; I haven’t tried this myself though.
- Coconut flour: Try using about 3 Tbsp of Almond Flour. I haven’t tried this either.
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though)
- Cashew Butter: Almond, hazelnut or any nut or seed butter; Even Tahini! I would not recommend peanut butter since it has a strong taste
Vegan and Dairy Free Edible Sugar Cookie Dough
Use a plant based protein powder and collagen to get a Vegan cinnamon protein cookie dough with the; The recipe is already dairy free since it uses almond milk and no actual milk.

Gluten Free

Ingredients
- ¼ cup Oat Flour, 22g, see post for sub
- 1½ Tbsp Protein Powder, 8g
- 1 Tbsp Coconut Flour
- ½ scoop Unflavored Collagen, 5g, see post for sub
- 1 tsp 1:1 Sugar-free Sugar Replacement, 4g
- 1 Tbsp Almond Milk, 15ml
- 1 tsp Almond Butter or Cashew Butter, 5g
- ¼ tsp Cinnamon
- 1 Tbsp Cinnamon Toast Crunch Cereal, optional 2-3g
Instructions
- Combine all the ingredients except cereal in a bowl and mix – oat flour, protein powder, collagen powder, coconut flour, sugar replacement, cinnamon, cashew/almond butter and almond milk.Use more or less milk depending on how runny you want it.
- Add option cinnamon toast crunch cereal and mix.
