Zucchini Oats
I’ve done the whole Zoats – Zucchini Oats – thing way too many times already, so its not that novel a concept here.
Zoats are a version of the normal hot oatmeal where you stir shredded zucchini into the porridge. Get some extra veggies in first thing.
But Zucchini Overnight Oats?
Never even gave it a thought.
I don’t know what came over me yesterday that I decided to Google “zucchini overnight oats”.
Turns out its actually a thing. Well there weren’t that many recipes on there; Just a handful. Most certainly nothing compared to the amount of recipes you can find for either of the regular oatmeal versions.
But even the few comments and 5-star ratings were enough to convince me. But of course I had to do a chocolate and high protein version coz it changes everything.
How does this work?
Mix all the ingredients together in a jar, lick off that spoon, stash the jar away in the refrigerator.
Sleep and wake up super excited to try it out!
But before that, just add in a splash of almond milk to thin it out a little.
The oat, zuke and protein powder soak up the liquid to give a thick concoction.
And then the hardest part for me?
The shoot!
Not only did I want to dig in asap, but it took forever to align those banana pieces, and then I just could not for the life of me find a good angle to take the pictures. Tried portrait mode, regular, sitting at different angles, don’t ask.
I ended up taking like 150+ pictures and told myself I’d have at least one decent one in there. I just couldn’t wait anymore.
The result?
This turned out so good! Thick, creamy, ultra chocolatey. The zucchini blended in so well and added a lot of bulk to the bowl without really affecting the taste at all. Maybe it was the protein? I don’t know. But it worked!
Just made another batch for tomorrow!
Chocolate Zucchini Overnight Oats with Protein
Ingredients
- ⅔ cup Old Fashioned Rolled Oats, 60g
- ⅔ cup Zucchini, Shredded (Moisture Intact), ⅔ medium, 118g
- 1 + ¼ cup Almond Milk
- 1 scoop Vanilla Protein Powder, about ⅓ cup, 30g, or refer notes for extra oats option
- 2½ tablespoon Cocoa Powder
Instructions
- Combine 1 cup milk and other ingredients for the oats in a jar and mix until smooth.
- Cover and refrigerate overnight or at least 8 hours.
- Stir in remaining ¼ cup milk before serving and enjoy.

I love your Instagram and always see the zucchini oat bowls but am more of an overnight oats girl–so, knowing how much I love your recipes, I came looking for zucchini overnight oats on the blog.
Let me say, don’t sleep on this recipe! I was afraid that overnight oats with zucchini would taste like zucchini and be gross texture since it wasn’t cooked at all…but no! Perfect bulk ingredient and SUPER tasty oats! I adapted slightly to fit my texture preferences by using oat flour instead of whole rolled oats and used cake pop protein powder since that’s what I had! But another win on this recipe! The scond time I tried this recipe, I warmed them in the morning in the microwave (I know, weird for overnight oats…) and achieved a little crust on top for some texture, highly recommend!

All the added bulk from the zucchini, but none of that weird flavor. All you taste here is the good sweetness from the protein powder.
I love the idea of using oat flour and microwaving it too. I’m a hot oats kind of a person and that crust sounds perfect. A must try!
