This amazing sweet potato protein dessert bowl is sweetened with protein powder and has no added sugar – a healthy breakfast or dessert option.
- Sweet Potato
- Vanilla Protein Powder: I used Truvani Plant-based Vanilla protein here; Its mildly sweet and adds a nice earthy flavor along with the protein!
- Coconut Flour
- Ground Cinnamon
- Ground Nutmeg
- Unsweetened Almond Milk
- A Pinch of Stevia Sweetener
How to Make Dessert with leftover Sweet Potatoes?
This really is the perfect dessert to make with leftover sweet potatoes from your Thanksgiving shopping because its really easy to make!
Step 1: Prepare the Sweet Potatoes
- Boil Water: Fill a medium-sized pot with water and bring it to a rolling boil on the stove.
- Prep the Sweet Potatoes: Peel the sweet potatoes and chop them into 1-2” cubes for even cooking.
- Cook: Carefully add the sweet potato cubes to the boiling water and cook for 12-15 minutes, or until they’re tender and easily pierced with a fork.
- Drain and Cool: Drain the water and let the cooked sweet potatoes cool for 1-2 minutes before handling.
Step 2: Combine and Assemble
- Puree the Sweet Potatoes: Place the cooked sweet potatoes into a large mixing bowl. Using a hand mixer, puree until smooth. Alternatively, use a food processor for a creamier texture.
- Add Milk: Gradually add milk to the pureed sweet potatoes and blend thoroughly until smooth.
- Incorporate Dry Ingredients: Add vanilla protein powder, coconut flour, cinnamon, nutmeg, and stevia powder to the mixture. Blend until all ingredients are well combined. Adjust sweetness by adding more stevia powder if desired.

- Coconut Flour: 2-3 Tbsp Almond Flour would work well (and keep the recipe gluten free).
- Vanilla Protein Powder: Use whey or whey-casein protein powder if you prefer. Be sure to taste the mix before adding any stevia in this case.
- Almond Milk: Regular milk or lactose-free milk or any other milk.
- Stevia Sweetener: about 2 tsp of your choice of sweetener. Sugar, brown sugar, coconut sugar or even maple syrup would work!

Sweet Potato Protein Dessert Bowl – No Bake, Easy!
Ingredients
- 1 large Sweet Potato, 280g
- ⅓ cup Plant-based Vanilla Protein Powder, 29g
- 6 Tbsp Unsweetened Almond Milk, 90ml
- 1 Tbsp Coconut Flour, 7g
- ¼ tsp Ground Cinnamon
- ⅛ tsp Ground Nutmeg
- Pinch of Stevia (as per taste)
Instructions
Prepare Sweet Potatoes:
- Boil water on a stove-top.
- Peel and chop sweet potatoes into 1-2” cubes.
- Add sweet potato into boiling water and cook about 12-15 minutes until easily pierced with a fork.
- Drain water and let cool 1-2 minutes.
Combine and Assemble:
- Place sweet potatoes in a large bowl and puree using hand mixer (or use food processor).
- Add milk and blend completely.
- Add vanilla protein powder, coconut flour, cinnamon, nutmeg and stevia powder. Blend until combined.Taste and add more sweetener if desired.
- Transfer to 2 serving bowls, top with chocolate chips and granola and enjoy!
