I saw a pretty flatlay image of buckeye balls so of course I wanted to make some too; Thankfully I had a base recipe to go off of – these soft peanut butter protein cookies I’d made a while ago.
So the only real “effort” here was actually rolling those protein balls so they’re all the the same size and as round as possible.
I did go random on the chocolate though. Uniformity there would be a bit much.
Ingredients for Healthy Peanut Butter Protein Truffles
These protein peanut butter bites require just 4 ingredients (and chocolate) you probably already have in your pantry, so this the perfect recipe for homemade peanut butter truffles!
- Vanilla Protein Powder – I recommend KOS plant-based Vanilla protein powder.
- Creamy Peanut Butter so that it mixes well. Go for the plain unsweetened and unsalted one, whose only ingredient is peanuts!
- Peanut Butter Powder for the rich peanut butter flavor but to keep it slightly low fat, and add even more extra clean protein. This might also be called Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Sugar free Maple Syrup for low calorie protein bar with no sugar!
- I use the sugar free monk fruit maple syrup from Lakanto (code HAYLSKITCHEN gets you a discount)Sugar free Chocolate Chips to make these truffles something like a peanut butter buckeye candy, but still keep them low calorie, and with no added sugar. I’d recommend Lily’s.
If you notice, peanut butter protein balls have no oats, so they’re completely gluten free, low carb and keto keto friendly too!
How to make Protein Buckeye Balls
These protein buckeye balls are a no bake and no cook recipe; Just mix, roll and dunk easy protein energy bites.
- Combine the peanut butter, peanut butter powder, protein powder and maple syrup in a bowl.
- Stir and fold with a big spoon until it forms a dough. It might look too dry, but just give it a bit of time. If it’s still too dry, add just a teaspoon of more water.
- Spoon out some of the peanut butter protein truffle mix, about a tablespoon worth, and roll it using your (clean) hands.
And that’s it!
If you want the chocolate part to make peanut butter buckeye balls:
- Place the chocolate chips or chopped chocolate into a shallow bowl and microwave for about 1 minute – at 30 second intervals – until it’s completely melted.
- Place the protein truffle balls in the melted chocolate, and roll it around it’s coated on one side. Use a fork if you need (I didn’t :))
- Shake off excess chocolate and place the peanut butter buckeyes on a parchment-lined baking sheet to harden.
Do this one truffle at a time. You might need to reheat the chocolate every now and then so it remains melted.
Tips to make Protein Powder Buckeyes:
- I recommend plant-based protein powder for this recipe.
- If using a sweeter whey-casein blend, use only ¼ cup Maple Syrup and 2 Tbsp water.
- If using a sweeter whey protein, use only ¼ cup Maple Syrup, and add water only if needed.
- Heat chocolate in intervals – stirring each time – to avoid burning.
- Reheat the chocolate every now and them if needed so it remains melted.
How to store Homemade Healthy Buckeyes:
These healthy homemade peanut butter protein truffles store great for a meal prep snack or treat.
- Refrigerate the protein powder peanut butter truffles in an airtight container and consume within a week.
- Freeze protein peanut butter buckeyes for up to 2-3 months in an airtight sealed container. Be sure to let them thaw on the counter before eating!
Alternate ingredients for No Sugar Buckeyes Recipe
I made these no sugar buckeyes recipe with sugar free peanut butter powder, maple syrup, chocolate and protein powder. The beauty of this recipe is that you can easily substitute some of these ingredients and fit your lifestyle.
Here’s how to go about it, and also some other healthy ingredient swaps.
- Replace the powdered peanut butter with 2 tablespoons of peanut butter, and use only ¼ cup maple syrup instead of ⅓ cup.
- Instead of plant-based protein powder, you can use Whey-casein or Whey. See the tips section above for substitutions.
- Feel free to add some stevia sweetener or teaspoon or so of maple syrup if you want sweeter truffles.
