Jump to RecipeOkay no jokes, I made this recipe on the spur of the moment because I just wanted to use my Valentine’s M&Ms to make some sort of healthy dessert. This trifle recipe was basically a protein cookie and protein pudding with the V day M&Ms and the easiest I could think of.
But oh man! It turned out DELICIOUS! I was genuinely surprised! And very filling too.
Best part is it makes two jars so my husband and I each had our own 🙂
Ingredients for Valentine’s Day Protein Dessert
This healthy, high protein Valentine’s Day dessert is made with a protein cookie, protein pudding and Valentine’s M&Ms for the vibe.
The Protein Cookie Base
- Vanilla Protein Powder needed for high protein cookie and also replaces the ‘sugar’.
I recommend part whey-casein Vanilla protein powder from Quest Nutrition. - Almond Butter Powder, also known as Powdered Almond Butter. I use the one from PB2.
Peanut butter powder like this one from Lakanto or PbFit also works. - Whole Wheat Pastry Flour – or a regular all purpose flour
- Almond Butter
I recommend American Dream Nut Butter; It’s lower fat and higher protein. The link and code HAYLSKITCHEN gives you a discount too. - Almond Milk or regular milk
- Egg White
- Baking Powder
For the Protein Pudding
- Non-fat Greek Yogurt for a high protein custard
- Vanilla Protein Powder needed for high protein chocolate pudding. I used Quest Vanilla protein powder from Quest Nutrition.
- A bit of Unsweetened Almond Milk
How to make Valentine’s Protein Trifle
This Valentine’s protein trifle is rich and tasty and actually very easy to make! Here’s what it takes:
- Make protein cookie base:
Mix protein powder, flour, almond butter powder and baking powder in a bowl.
Use whey-casein Vanilla protein powder so it blends well and smooth with the yogurt and pudding mix.
Add in the egg white, almond butter and milk (little at a time or the mix will get too runny).
Mix until the batter is smooth, but spreadable. - Microwave the protein cookie:
Lightly grease a microwave-safe plate and spread the mixture on it in a ½” thick circle.
Microwave for about 1 min 15 seconds – top should be dry to touch. - Make the protein pudding:
In a bowl, mix Greek yogurt, protein powder, and milk until smooth.
Add milk a little at a time until pudding consistency is reached. - Assemble:
Let cookie cool for a few minutes, then chop unto ½” pieces.
Chop half of the M&Ms.
Assemble 2 jars with alternating layers: chopped cookie mixed with chopped M&Ms, pudding layer.
Add more M&Ms on top.
How to store Valentine’s Day Protein Treat?
This high protein Valentine’s Day treat has to be stored in the fridge; Place in airtight container or cover jar with plastic wrap. It keeps for 3-4 days.
Valentines day protein dessert trifle will keep out at room temperature for only a few hours.
Alternatives for Healthy Valentine’s Day Dessert
For the perfect healthy Valentine’s Day dessert trifle, I would highly suggest using the ingredients recommended.
I do have some alternatives you can try. I haven’t testing them all, so I can’t say how the recipe might turn out.
- Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, in the same amount by weight; not cups.
- Almond Butter Powder: Peanut Butter Powder (Lakanto for a sugar free version; the code HAYLSKITCHEN gives you a discount)
or 2 tsp Almond Butter (also reduce milk to 1½ Tbsp) - Almond Butter: Cashew Butter or any nut or seed butter.
Pudding Options:
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk

Ingredients
- ¼ cup Vanilla Protein Powder, Whey-casein, 22g
- 1½ Tbsp Whole Wheat Pastry Flour, 11g (or regular AP)
- 1 Tbsp Almond Butter Powder, 6g, or PB Powder
- ¼ tsp Baking Powder
- 2 Tbsp Unsweetened Almond Milk, 30ml
- 1 Egg White, 31ml
- 1 tsp Almond Butter, 5g
Pudding:
- 3 Tbsp Non-fat Greek Yogurt, 42g
- 1 Tbsp Vanilla Protein Powder, Whey-Casein, 6g
- 1 Tbsp Unsweetened Almond Milk, 15ml
Topping/Mix-in:
- 20 pieces Valentine’s M&M’s
Instructions
Base:
- Combine protein powder, flour, almond butter powder, baking powder in a bowl.
- Add egg white, almond butter and milk (little at a time) and mix until thick but spreadable.
- Lightly grease a microwave-safe plate with oil or cooking spray.Transfer mixture, spread with spoon and shape into circle – ½” thick.
- Microwave on high for about 1 min 15 seconds – top should be dry to touch.
- Let cool for a few minutes, then chop unto ½” pieces.
