I actually tried the recipe for this white chocolate and raspberry traybake blondie twice, because the first was just like a block of sugar!
For some reason I thought it was a good idea to try a new blondie base recipe instead of adapting the one I had from my Peanut Butter Protein Blondies, and it was a mess.
Made myself have them for 2 days and then had to throw it in the trash. It was just too bad.
Round 2 here was a major success!
Ingredients for White Chocolate Raspberry Protein Blondies
These high protein raspberry blondies are made with a few healthy ingredients, and have no eggs, no oil, no sugar and gluten free too. An overall great white chocolate and raspberry traybake!
- Vanilla Protein Powder needed for high protein blondies and also replaces most of the ‘sugar’.
I used half whey-caesin Vanilla protein powder from Quest Nutrition, and half the Slender Blend form ProteinWorld in these protein powder blondies recipe (code HAYLSKITCHEN gives you a discount on ProteinWorld). They have a Whey Protein Powder that’s great as well.
If you have just one, I would recommend a whey-caesin only for this white chocolate raspberry protein traybake.
- Gluten Free (All Purpose) Baking Flour – or a regular all purpose flour
- 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too.
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit or PB2 too.
- Non-fat Greek Yogurt contributes to the oil-free part of these high protein low calorie protein blondies since it adds the moisture, and also extra protein
- A bit of Almond Butter – for the rich caramel blondie flavor.
- Almond Milk or regular milk
- Baking Soda
And then for the white chocolate raspberry blondie:
- Sugar free Chopped White Chocolate or chocolate chips. I use the white chocolate bar from Lily’s here. They also have white chocolate chips that would work too.
Tips for perfect Raspberry Protein Powder Blondies
This healthy raspberry dessert with protein powder is really easy to make, and here’s some pointers to get it right.
- Use room temperature milk and yogurt;
This is so the wet ingredients and dry ingredients can mix well.
- Room temperature drippy almond butter so it mixes well too and does not clump.
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder will make the white chocolate blondies tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar raspberry blondie recipe.
How to store White Chocolate Protein Blondies?
This high protein white chocolate blondie recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!
Store raspberry protein powder blondies at room temperature in an airtight container for 1-2 days or in the fridge for a week.
To freeze healthy raspberry blondies, individually wrap each protein blondie square in plastic wrap and place in freezer-safe zipper bags or air tight container; The blondie bars should keep for 2-3 months.
Alternatives for Healthy Raspberry White Chocolate Blondies
I made these high protein healthy raspberry blondies with sugar free white chocolate and particular brand of protein powder, and know they turn out amazing this way.

I do have some alternatives you can try, but I haven’t testing them all so I can’t say how your recipe might turn out. I’d love to know if you do!
- 1:1 Gluten Free Baking Flour: All purpose flour or Whole Wheat Pastry Flour; The same amount by weight
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Peanut Butter Powder: 2 Tbsp Almond Butter, but reduce the milk to about ¼ cup (I haven’t tried this yet though)
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- Almond Butter: Sunflower Seed Butter, Hazelnut Butter or even Tahini; Peanut butter might give a strong flavor, so I wound’t recommend it.
- White Chocolate: Regular chocolate works as well. I recommend Lakanto to keep it sugar free; (Code HAYLSKITCHEN gets you a discount here too)
To make Vegan Raspberry Blondies
For a high protein Vegan raspberry blondies recipe, use coconut yogurt in place of Greek Yogurt, dairy free chocolate and also a plant based protein powder.
ProteinWorld has a Vegan protein blend that could work well here (HAYLSKITCHEN for the discount here too).
I haven’t tried pea protein or other plant based ones, so I can’t say how those would work.

White Chocolate Raspberry Protein Blondies – Actually Healthy
Ingredients
- 60 g 1:1 Gluten Free Baking Flour, see post for subs
- ½ cup Vanilla Protein Powder, 45g, about 1½ scoops
- ¼ cup Zero Calorie 1:1 Sugar Replacement, 48g
- 3 Tbsp Peanut Butter Powder, 18g
- ½ tsp Baking Soda
- 1 cup Non-fat Greek Yogurt, 225g
- ⅓ cup Unsweetened Almond Milk, 80ml
- 2½ Tbsp Almond Butter, 40g
- 1½ cup Raspberries, 185g
- 3 Tbsp Chopped White Chocolate or Chocolate Chips, 42g, Sugar-free recommended below
Instructions
- Preheat oven to 350°F and line an 8” x 8” baking dish with parchment paper.
- In a bowl, whisk gluten free baking flour, vanilla protein powder, zero calorie sugar replacement, peanut butter powder and baking soda.
- In a large bowl, whisk together Greek yogurt and almond milk.
- Add dry mix to wet, and gently stir until just starting mix.Add almond butter and fold until combined.DO NOT OVER-MIX or protein powder will make the blondies gummy.
- Add in raspberries and chocolate (reserve some for the top) and fold again.Do not over-mix.
- Transfer to baking pan, top with remaining white chocolate and raspberries (press in).
- Bake for about 30 minutes.
- Top should be set and toothpick inserted into the center should come out dry.
- Remove from oven and let cool completely.Cut into slices and enjoy!

White chocolate and raspberry are a match made in heaven! Love the idea to pair it with peanut butter flavor!
The combination really is quite underrated! I went for a mix of peanut butter and almond butter in these blondies, so the PB doesn’t come out at all; Just the rich blondie flavor with the slightly tangy raspberry. Hope you give it a try.
To be completely honest raspberries are my least favorite berries. But in these blondies they climb up the ladder!!! So soft and delicious ?
